My low carb vegan diet is working

I finally figured out how to stick to a vegan diet and get my carbs down to 20 a day.  I've only been there 2 days so far, but have lost 3 pounds already.  I'm thrilled that the weight is starting to come off again and that I'm back on track.  Getting plenty of protein in my diet thanks to vegan protein shakes (at least 50 grams a day which is all my kidneys can handle), and now getting over 50 grams of fiber in my diet which fixes one of my biggest problems with my meat centered plan.  If you know anyone who is leaning towards a vegan diet after bariatric surgery, send them my way.  I post my food on my blog every day, and blog about everything I find out each day.  I'm finally happy with my diet choices.

Congrats!!I will be sure to check it out! While I am not vegan, I do miss having more veggies and don't want to feel like I am a slave to meat :)

I'm having a large salad right now with mixed greens, baby portabellos, asparagus and avocado.  I enjoy this salad with just salt and pepper, but any fat based dressing would be fine.  I also plan on adding black soy beans to my salads.  They are low carb, high protein and high fiber...another great ingredient for salads.  I eat two of these a day with differing ingredients and different dressings.

There's no reason you can't take the diet and modify it to your tastes and desires.  Many people who don't eat meat do eat fish.  Or you could go vegetarian with fish and still be able to enjoy eggs and dairy.  It's all in what works for you.  I like fish, too, but there are just too many things wrong with both wild and farm raised fish that bother me enough to exclude them from my diet.

I read your blog. This is very intriguing to me. If I could figure out a way to get 80+ grams of protein, low carbs and keep my calories between 600-800 I'd be all over it. I've never been a lover of red meat. I usually eat tuna chicken tuna chicken. I'm going to be watching your progress. Thank you for your post

I started out getting about 120-140 grams of carbs a day when I first started.  That's actually considered low carb for a vegan diet.  I found Desiree's Low-Carb, Vegan, and All Natural Lifestyle on Facebook, and she was getting it down to 20 grams or so of carbs a day, but she doesn't get much protein.  That's why I added my shakes in the morning and evening.  Vegan protein shakes don't taste very good, but I've started experimenting and putting in a couple heaping tablespoons of instant coffee and some sweetener and blend with ice, and it's sort of like a Frappaccino.  Sort of!  LOL.  I plan my meals a day in advance so I can figure out my carbs for the day ahead of time and don't have to worry about running over before the day is over.  My calories so far have been about 700-900 a day, although I'm really not worried about calories or fat.

That's great!  I'm still in puree but I'm very turned off by all the meat, so I have checked out your blog a few times.  I've been slowly moving my family toward a plant based diet over the last few years and I hope to continue it now that I'm post surgery.

I don't want to discourage you and your efforts because you do seem to be making some progress......

I looked at your blog and the food does look tasty......

The only potential problem I see is that your virtually eliminating a prime component to the process.....

If you want me to expand on that I will.... otherwise I;ll just encourage you to keep goin and doing what your doing !!!!
