I made eggface bites today

They were so good that the whole family started tasting, and I ended up making a second batch.  First batch - leftover turkey, onion, asiago cheese, chopped leftover brussel sprouts.  Second batch - ham, onion, asparagus, cheddar & fontina cheeses, with a little fresh grated parm on top.  Don't know which one is better.  Packed up my lunch & snacks for tomorrow - 4 eggface bites, some turkey, sprouts & a tablespoon of mashed potatoes.  I can hardly wait to eat again!!

Had RNY surgery July 22/11, St. Joe's Hamilton, with the awesome Dr. Scott Gmora.  Had abdominoplasty August 2/13, Scarborough, with equally awesome Dr. Michael Kreidstein.

I love these little bites too.  I've made them and served them as appetizers to my family and friends; everyone loves them and I love to serve something wls friendly so I can endulge too.

They're awesome, right?

I make GIANT batches and then freeze them.  I have a tiny Pampered Chef stone, and I put them on that in the toaster oven...they are just like fresh.  My family loves them too - so I need to make lots to feed everyone!

I am so excited to try them post surgery! I went out and got a mini muffin tin the other day.. a 24 cup one for $9.99 at HomeSense!  Does anyone know when post up they would be able to start eating those?

I'd think it would depend what you put in them.  If you made them with just cheese and cooked veggies...they'd be pretty soft.  But with meat - you'd probably need to wait until you were on "real" food...

I made the ham & cheese breakfast ones last week.   Soooo yummy!  Caught my husband sneaking some out of the freezer too :)
