egg bites...do they freeze well
So i don't know what took me so long....but i finally made egg bites...i didn't have all the ingredients so made them with turkey breast slices instead of ham with a few other things missing...they are so good. My question... do they freeze well....i'm thinking they would be a great mid morning snack.
Yes I just package them in ziploc baggies and then nuke them when I want them. I made spinach, feta with bruchetta mix that turned out pretty yummy as well. I love these and find that they are great little appetizers when I entertain because then I don't have to feel guilty when I indulge and everyone else loves them too.
I've never made them but I read this on Eggface's site.
"Bites freeze great. Defrost in the fridge and heat in oven or toaster oven (preferred), or microwave. They are fine up to three days in the fridge though... if they last that long. They are great for holiday parties because tons can be made ahead and reheated when ready for serving."
I assume they would be fine. Most of the time when I freeze things like this, I wrap them individually in saran wrap and then put all the individual portions (for me it's things like protein muffins or lasagna cupcakes) into a ziploc freezer bag. I assume that this would work well for freezing the bites too.

They are mini individual lasagnas you bake in a cupcake or muffin tin. There is a recipe on the Ontario Recipe forum, or you can google a bunch. Here's the one I used as a basis for mine. http://www.the-girl-who-ate-everything.com/2011/08/lasagna- cupcakes.html
Usually, when we make meat sauce, I use the meat sauce in place of the marina and ground beef. You could sub in ground turkey or chicken but I like the beef taste. Essentially, you use a muffin tin and layer a wonton wrapper, aTBSP of meat sauce, a TBSP of ricotta, a TBSP of low fat cheese (I use the kraft tex-mex blend) and repeat, ending with the low fat cheese and sprinkling the tops with a bit of low fat parmesan cheese and italian seasonings. Then bake in the oven.
They are really good and reheat really well in the microwave.

I made those at Easter for the company( and myself) I'm pre op but wanted to eat a holiday meal that was friendly to see how it felt in a social situation to eat a small meal and a changed diet from the normal huge buffet. The things I made from the egg face web sight flew off the table first! Everyone wanted the recipes. So when I showed them Shelly's web sight they were thrilled. I froze mine and took them out yesterday they were so yummy for a lunch with salad.
