Lemon Meringue Pie

Hello:

I am very proud of myself today, I made a sugar free Lemon Meringue pie and it tastes pretty darn good.  I used the recipe from the Equal website but used Splenda.  Even the meringue is decent.

 

It felt good to get out my mixer and  use my brain, hmm what will be next??

OMG, all you people and your recipes are killing me today (I'm on Opti, can you tell?)!   But seriously, that sounds amazing.  I LOOOOOVVVEE to bake.  I was even shedding a tear for my lovely Kitchenaid Mixer that I'm going to move into the cupboard to make way for my InstantPot (slow cooker / pressure cooker / does-everything thing).  I'm glad to see that there's baking to be done after surgery.  Looking forward to trying new things with Splenda.  Going to check out the recipe you suggest above and "pin" it on my Pinterest page for later use!
