But for goodness sakes, don’t call it a quiche! A quiche is light and airy. This bad boy is hearty. This is not brunch food. In fact, I don’t necessarily label it breakfast food. I do, however, label it yummy!

  Don’t get me wrong folks. When I say hearty I don’t mean “too heavy to eat." The eggs cook up nice and soft but the volume of protein packed stuff takes it just a bit beyond the realm of a quiche.
Which is why I’ve dubbed it a "Mexican Egg Casserole" (no idea if that is a real term or not…I guess it is now!) Check it out on Bariatric Foodie!

You know I never tried it until after surgery? How did I live this long without it!

I originally bought it to make a WLS friendly version of Melissa D'Arabian's Juevos Rancheros cups but never did get around to it. This is soooooo yummy.

I just printed the recipe.

however I'm an not a fan of sausage, so how do you think substituting TVP for sausage would work?

Hmmmm…I could see that IF you did the following:

 

#1 – rehydrate the TVP with water BEFORE adding to the eggs (lest the TVP suck all the moisture out of the thing)

 

#2 – flavor TVP with taco seasoning

 

That could actually work. Whoa…that was some serious “on the spot" thinking there!

Looks delicious but where in the world would I find the sausage at?  I amazingly found mexican cheese at my Walmart (way to go Minnesota!) but have ZERO clue if I can find this sausage, could I substitute turkey sausage instead??????? Yummy, good thing I bought some more eggs I was dying thinking of eating scrambled yet again!!!  Love your recipes, making some tuna boats tonight one of my favorites!!!

I got mine at Aldi. Do you have that store in MN? If not, I'd say hot (or mild) Italian sausage would work the same way.

Mmm. Sounds so flavorful! This makes me wanna go buy some veggie chorizo.

Having RNY was probably the best thing I've ever done for myself.

Approx highest weight: ~350. Highest measured weight: 338. Surgery weight: 297. Lowest weight (for 5 minutes): 169. Current weight: 209. Goal weight: ??? - maybe 180-185, which was my maintenance weight before the regain.
