I need crock pot recipes!

Family favorite that I got while on Weigh****chers years ago...

4 boneless skinless chicken breasts
1 package of Italian dressing mix (powder)
1 large can of diced tomatoes (with the juice)
1 can of tomato sauce
1 onion diced

Put the chicken breasts in whole then add all other ingredients.  Cook on low for the day or high for 3 hours.

I have also used this recipe with roast and with boneless pork chops.  It is incredible!!!

 We do Chicken Breasts (I put them in frozen), a can of FF Cream of Chicken soup, a jar of salsa (we do mild for the kiddos, but use what you can stand).

Cook on low all day.  Great over rice for kiddos with a side a green beans.  Easy peasy!

~LAZY MAN LASAGNA~

In the crock pot layer:

green cabbage (instead of lasagna noodles)
sauce (i make my own-paste, diced tomatoes, veggies, spices)
cheese
ground turkey or beef

you can be creative an add anything to this...sometime to "beef" it up, I will add a little brown rice between the layers.
* just make sure you add enough sauce/wettness to cook the rice/meat/cabbage.

Usually takes about 3-4 hours on high.

DH demands this at least once a week....I use thighs because no matter how breast meat is cooked it's too dry for me.

PamT's Southwest Chicken

6 chicken thighs or I use a whole package of thigh strips.
1 jar salsa...I use Fantova's Peach and Mango salsa from Kroger.
2 14oz cans Black Beans
1 10oz pkg of frozen corn

Layer in order as listed and cook on high for 6 hours.

I am surprised at how much water is pumped into chicken, it almost ends up like a soup. But instead of pouring it off and wasting the flavor, I've been adding 1/2 - 3/4 cup of TVP to boost the protein a bit and it also almost doubles the recipe!

I make EVERYTHING in mine!  Pork roasts, pot roast, *insert type of meat here* roast, turkey or chicken chili, Corned Beef and Cabbage, Chicken with low sodium taco seasoning that comes out completely ready to shred for chicken taco salad, beef stew, you name it!!

My favorite is Pam T's southwest chicken. I put in four frozen chicken breasts topped with a can of RoTel tomatoes on low for 6 hours then when you turn it off add a package of lowfat cream cheese and let it melt over it.  It just melts in your mouth!  Yumm!
