Any one have trouble with Gluten?
Prior to surgery I had no trouble with Gluten. Since surgery, like all of us, I've cut out processed carbs for the most part. But every now and again I will have something: a couple of crackers w/my tuna and veggies or a pita roll up, even a bite or two of my hubby pasta.
Now I don't have any trouble with sugar or fats (dumping). But I've had two occations now that I've had a small amount of garlic toasted white bread (1/2 piece) and I feel like I've got a HUmming bird trapped in my chest for about 1/2 hour to 45 min.
Based on my food logs it really seems that it's the quick digestion of gluten in these two instances that is the factor.
It's easy enough to stay away from but I'm just wondering if any one else has come across this?

I'm trying to eliminate gluetin (Wheat, Barley, Rye). It makes me bloated, crampy and a little nauseous. I've not really had much bread, crackers, etc. in the last two years so I don't anticipate it being a big issue.
The other issue, for me, is that there isn't much nutrition is these products anyway - unless they are unprocessed - which is hardly ever the case. When the wheat is processed the enzymes and much nutrition are stripped away to make consistency and shelf life convenient for us - too bad. They tend to be high calorie, easy to get stuck, swell in our pouch, and we develop a craving if we eat too many simple carbs.
I'm trying to incorporate organic, non-processed, no antibiotic or herbicide foods into my eating plan. Using alot of clean and raw food. It is working well for me.
