Nik or someone with sofrito info

I am making the red beans and sausage from Nik's site and can't for the lie of me find the sofrito in the stores. Is it a big part of the dish and is there someway to sub some ingredients for it? Thanks!! Kim

Have you looked in the Mexican food aisles?  You can find a recipe easily on line.

 You can find it premade on the Mexican or Hispanic aisle of your grocery store - I recommend Goya brand. But, for quality control you can make your own.

Ingredients

  • 2 medium green peppers, seeds removed
  • 1 red sweet pepper, seeds removed
  • 2 large tomatoes
  • 2 medium onions, peeled
  • 1 head of garlic, peeled
  • 1 bunch cilantro leaves
  • 1/2 bunch parsley leaves
Cook all ingredients down and blend until slightly chunky.
