lunch ideas

need something easy to bring to lunch at work. we have luncheons all the time lately and i've been eating what they have...only what i can actually eat anyway. i avoid all the pizza/pastas but today i had chicken in balsamic vinegar, couple pieces of salad, and a few grapes....but i would like ideas to bring for lunch because regardless if what they have at work for lunch is healthy, making my own food is probably a lot healthier....any ideas would be great. except egg salad and tuna salad...loved that when i first could start introducing foods again, now i can't even stomach the thought of it lol

I make a wrap with lettuce as the "bread" and then turkey with sliced cheddar.  I add a touch of mayo, wrap it with the lettuce and enjoy.  It's a good quick lunch since I'm usually on the go at lunch time.

I made a big pot of chili over the weekend ...it's easy to scoop your measuring cup in and put it in a gladware.

I, too take chili with I small spoonful of greek yogurt and some cheese in it
-half of a vanilla carbmaster yogurt with a little granola and almonds in it
-I take a piece or two of laughing cow cheese with a couple of pretzels to dip in it (or crackers or veggies) and some pepperoni chips ( turkey pepperoni I cook in the microwave until crisp)
-I like to take little cubes of cheese..especially smoked cheddar and some pieces of fruit or veggies
-I like to make some tuna salad with mayo or without and then put in on a salad with veggies and maybe some oil and vinegar..yummy
-I also like to take refried beans with salsa, cheese and greek yogurt mixed in them
-A leftover meatball (or two) (homemade) with sauce ..is a yummy lunch with some salad or something to go with it. 
-Tomato and mozzarella salad with balsamic vinaigrette dressing (the real mozzarella) is good
-turkey/cheese roll-up
-turkey/cheese..melt a little, spread hummus on it and put pickle on it...eat..YUMMY
-peanut butter protein balls...although I usually use those as a snack, depends

I freeze leftovers in an icecube tray.  Then I can get out 2 cubes for 1/4c of soup, or whatever.  Meats I freeze in 2 oz packets in snack bags.  Makes getting lunch together very easy.

 I like dill chicken.  I take a can of chicken drained, Add some purple onion, dill weed, and mayo. It is great plain or on a cracker.

Any leftover meat from dinner smothered in black beans, salsa and hot sauce is a staple for me.  I also love taco salads (lettuce, ground turkey cooked w/ taco seasoning, grated cheese, Greek yogurt, salsa, black beans and hot sauce).  When my husband grills I have him cook a package of these habanero monterey chicken sausages.  I then freeze them and grab one when I need a quick lunch (usually cut it up and put it in the beans/salsa/hot sauce).  I love chicken breast dunked in Frank's Red Hot.  Greek yogurt w/ Truvia, lemon extract, fresh berries and Kashi Go Lean is quick and easy.  Sometimes I mix Truvia and PB2 w/ Greek yogurt and use that as a peanut butter dip for slices of apple.  I love to cook a 3 lb package of boneless skinless chicken breasts in the crock pot w/ a jar of salsa.  When it is finished cooking I add a brick of reduced fat cream cheese and let it cook for another 30-60 minutes.  I then stir the whole thing and the chicken just falls apart.  I then use the shredded chicken for salads, tacos, etc. or just eat it heated up w/ some black beans.

Love the chili idea, but I'm not that big on meat, so I make it with tofu. Tofu is pretty good. It absorbs the flavors of whatever you cook it in or with.

How about a fritata? You could prepare the scrambled eggs, maybe use ham and a low fat cheese with some parsley chopped...fine and make it in a cupcake pan so that you bake off a dozen at a time? I would just spray it with Pam instead of using butter and add a little milk to the scrambled egg mix to make it go a ltitle further.  I've baked a large one at 350 for a while to get it done, but you can jus****ch it and see when everything is set. Then just pop them out and cool. You can reheat at work or just eat cold.

Or how about some frozen protein ice cream? I like plain greek yogurt mixed with fresh chopped strawberries, stevia, protein ( I use Jay Robb Strawberry egg-white protein or Designer Whey Vanilla) and milk...blended on high for about a minute or two, then just pop in the freezer in whatever size container you use as a serving size. I would like this one for summer, plus if you are stressing, it feels like a treat!

I pack my lunch to work and what you had is what I have most days:  grilled chicken (or fish, or beef) whatever is left over from night before with a little bit of lettuce, cheese, banana peppers and my own balsamic dressing.  Other days it is tuna/egg salad with lettuce and tomatoes --but you didn't want to hear about that, did ya?

My mid afternoon snack is a little less than 1/2 c greek yogurt, 1 packet of stevia, and frozen blueberries on top.  They have unthawed by the afternoon and I have my own blueberry yogurt - great source of protein without any additives.

In the cooler months, I make chili or lentil soup and keep small containers frozen and they make easy grab and go lunch bowls.

I am creating my own revolution and PAMdemonium reigns!
