Pot Roast Recipe
I made this yesterday and had to share. If you like pot roast this came out pretty yummy.
1lb pot roast (I forget the exact cut I used, but it was very lean, not a lot of fat)
1 can fat free cream of mushroom soup
1 lb baby carrots
1 package ****ake mushrooms
1 package button mushrooms
Low fat, low sodium beef broth
1 packet beefy onion soup mix
3 red potatoes
Dice the potatoes into 1 inch cubes
Put the potatoes, carrots and mushrooms in the bottom of a crock pot
Season the roast with salt and pepper and place on top of the veggies
In a bowl pour the cream of mushroom soup, and onion soup mix. Fill the soup can with beef broth and add to the soup mixes. Stir well with a fork. Pour over beef.
Set crock pot to high and cook for 6 hours.
Turn the crock pot down to low for another 1 - 1.5 hours.

You might want to check with your doc. I don't remember being allowed beef during soft food stage.
