What should I do with leftover pork roast?

I cooked it in the crock pot last night and I have quite a bit left.  It was very good, but a little bit dry/plain.  I am wondering what I can do with the leftovers to shake it up a little bit and make another meal out of it.  Anyone have any good ideas?

add it to spagetti sauce

get a can or two, if it is really a lot of meat, of Golden Mushroom soup and our it over it and reheT. It will be so moist and flavorful.

I would make the mushroom or celery soup into a gravy and soak in there. YuMMO!!

dice it up into maybe 1 inch cubes and add a can of green chili ( enchilada) sauce it tastes delicious and is still low in carbs

cut it up and pour some salsa in it you can add green peppers, onions and make tacos very good

I put it in the fridge over night.  The next day it is cold and the fat is easy to cut off (if it had fat on it to begin with).  Then I mix it with BBQ sauce, heat it up and make BBQ sandwiches with slaw.  Of course, I don't eat the buns!

I top mine w/ black beans, lots of salsa and Frank's Red Hot.  I like things spicy and the salsa and hot sauce add moisture.

Diced up with some pico de gallo, diced avocado, squirt of lemon or lime juice; mound on top of a salad or add a can of black beans and enjoy.  BBQ sauce is good too, jus****ch the sugar.
