I cooked it in the crock pot last night and I have quite a bit left. It was very good, but a little bit dry/plain. I am wondering what I can do with the leftovers to shake it up a little bit and make another meal out of it. Anyone have any good ideas?
I put it in the fridge over night. The next day it is cold and the fat is easy to cut off (if it had fat on it to begin with). Then I mix it with BBQ sauce, heat it up and make BBQ sandwiches with slaw. Of course, I don't eat the buns!
Diced up with some pico de gallo, diced avocado, squirt of lemon or lime juice; mound on top of a salad or add a can of black beans and enjoy. BBQ sauce is good too, jus****ch the sugar.
