Egg and Potaot Bake!
Wanted to try my hand at something different, so last night I made an egg and potato bake.
Using two red potatoes, peeling off the skin, I thinly sliced both up in a small pan. Scrambled 4 eggs with about 1/3 cup of soy milk (if I had cheese I would had added that as well) seasoned the eggs as well as the potatoes and poured the eggs over the potatoes. Put the pan in a 450 degree oven and baked for about an hour. turned out perfectly....great with turkey sausage patties or ground turkey and cheese sprinkled on top and heated in the microwave.
Happy it stayed down also! One small square was satisfying!
