So I was looking through http://bariatricfoodie.blogspot.com/  which is an awesome site for recipes to change things up a bit, and she had some nachos!  Mmmm sounded nummy, BUT she used some kind of weird chip I had never heard about, but what the heck.  So yesterday I went to Trader Joe's and bought a bag of Spicey Soy and Flaxseed tortilla chips --- and they are wonderful (especially as nacho's)..

Here is the nutritional info for the chips (below the table is how I made my nachos):

Not bad for a once in a while treat..  Better than regular nacho's at least!

I eat the Central Market Organic soy flaxseed chips.  They are incredible and hold up so well under all my toppings for nachos.  I LOVE them!

I love those things! I have not had them post-op (I'm only six weeks out), but I used to eat the heck out of them pre-op!!

I was just at Trader Joes this weekend and made sure these were in my cart. They are delicious and the nutrition is great for protein and fiber! Enjoy them!

There's actually TWO nacho recipes on BF. That was Jen's (my former partner's) version. Mine is a traditional "meat 'n cheese" topped nacho called "Nachos a la Nik" in case anyone wants to see a variation on the nacho theme. Same chips though.
