So I've pretty much mastered protein hot chocolate. But can't seem to get protein coffee down. I alwasy end up with big clumps of 'cooked' protein. Help!

I questioned this too after failed attempts. What I do is pour out my coffee and stick a candy thermometer in the cup. It only takes about 5-10mins to reach 130 degrees. I put my protein pwd mixture in a cup and pour the cooled coffee over it and stir......wella.....no lumps!!! (I do make a paste with protein pwd and milk...I add my splenda and even my Benefiber) Hope this works for you!!!

Where would I find a candy thermometer?

Walmart with the cooking utensiles. They are like maybe 5 bucks.

Just about any store where they sell cooking utensils. Or, Unjury.com sells a liquid thermometer for $5.

I don't use the paste method for my protein coffee...no matter how careful I am I end up with lumps.  Here's my method

Hillery’s Basic Protein Coffee Recipe
6-8 oz milk
6-8 oz cold decaf coffee
1 scoop protein powder
SF syrup to taste (usually 2-3 tablespoons)
Splenda to taste (I usually don’t need it but your mileage may vary)

Directions:
Add all ingredients to a shaker bottle (or blender/bullet) and mix. Pour into a microwave safe mug/container (my shaker bottle can go in the microwave, just remember to remove the metal whisk!). Heat for 3 rounds of 30-45 second, and stir between each round (for hotter coffee…go 45 seconds). IMPORTANT: do not try to microwave it all in one shot…the protein powder will curdle and you will have to start over (ask me how I know…lol). Pour in mug or travel cup and enjoy!

For the cold coffee...I use my 12 cup coffee maker and make a big batch of coffee and allow to cool...and put in a plastic pitcher in the fridge.  If I'm out of my cold coffee, I use my Kurig and make a cup first thing in the morning and then allow it to cool and mix according to the directions above.

I also have a blog post on my OH blog with different protein powder and syrup combinations.

you can use any brand you want....to be honest...I'm partial to the vanilla Target brand protein powder.  I get a HUGE tub of it (about a months worth) for $14 (Target's brand is a generic to Pure Protein I believe).
