What is your favorite Quinoa Recipe

I have 2 boxes of quinoa that I need to start using. I've got one recipe for an oatmeal - like breakfast recipe, but I need to know how you cook it as a side dish or part of a main dish to a meal. It's not so great just cooked alone. Any ideas?

I don't have any recipes but I do have a question.  I've been hearing and seeing all the hype about Quinoa and I dunno, when I look at the Nutritional info it doesn't seem all that great and that there is other things out there that are probably better for us.  

I am sure I must be missing something here...but I'm not sure what it is of course :)

It's higher in protein than other grains and apparently the protein is a high quality protein.  It's better for us than rice or wheat because it's higher in protein than those, so it helps if you're having trouble getting in all your protein, but don't want to eat meat or protein shakes or beans all day long.

I love Quinoa Tabbuleh.  Just make you favorite Tabbuleh recipe and substitute the quinoa for the couscous.

Thanks you guys! Gypsy, I know I've tried to get it in because it's a great whole grain that also has a big boost of protein. It's an uncommon blend that I've not found elsewhere personally.

I've just substituted the cooked quinoa for the macaroni in my mac-n-cheese recipe.  Just make the white sauce, add lots of cheese (I triple the amount in most recipes), and mix with quinoa.  Yummy.  Kids love it too.
