Long timers, looking for some new recipes that are good for me that my family can eat as...
I only cook for my husband and I so ymmv.
I tend to make regular meals - I get a lot of my recipes online. I will always sub whole grains for white where aplicable (rice, pastas, bulgur instead of couscous, if possible, etc). I purposely will try to avoid carbs earlier in the day if I know I'll be making something unavoidably carb-heavy for supper that night. I will also reduce the amount of carby goodness in a recipe and tend to up the protein/veg content. My husband doesn't complain...much. ;) Don't get me wrong - there are many, simple dishes that I make and just don't eat the carbs on the side or I serve myself 1/3rd a serving of pasta or whatever and have two meatballs to get my protein in.
Some of our favorites?
Spicy pork/chicken peanut noodles
Chicken enchilladas (I use low carb tortillas, low fat cream cheese & beans instead of corn! I just pulled small batch of these out the freezer for tomorrow!)
Any kind of stir fry - I usually make 2 servings of brown rice with it and I'll eat 1/3c or so w/ mine and my husband will eat the rest)
Beef stew, pot roast, homemade whole wheat pizza, baked chicken wings, homemade Jambalaya...these are all in heavy rotation.

Tonight I made individual turkey meatloaves in muffin tins. To 2lbs ground turkey I added 1 1/2 cooked quinoa, sauteed finely diced tricolored(red, yellow,orange) mini peppers and onions, about one cup, garlic salt, minced garlic, 1 tsp crushed red pepper, black pepper & oregano. Cook 350 degrees for 35 minutes. I served them with spaghetti sauce, sauteed cabbage, and home fries (for the family)
I haven't had a chance to get online since I first posted this, and I must say thank you so much for all the responses, I didn't expect so many replies. Everything looks and sounds so yummy.
I hate when I hit a point where I feel bored with my meals, or I catch myself making what I know my husband and daughter will eat and I'm left nibbling on something I know isnt the best choice for me.
Thank you again for all the responses, now I just need to decide what to try for dinner tonight

We have been trying to up our veggie intake. Hubs is 'dieting' as well, so that makes things much easier. DD is 17, so she either eats what is made or makes her own. We always keep frozen chicken tenders for the girl who orders chicken tenders wherever we go...
Anyway...
We really like squash right now. Spaghetti squash and butternut. They are both really easy to work with.
The spaghetti squash, I roast and shred. Grab a rotisserie chicken and pull/shred all the meat. Suatee onions, a bag of fresh spinach and garlic. Throw in the squash and chicken. 1/4 - 1/2 cup of Newman's Own alfredo and 1/2 cup or so of low sodium broth. let it bubble and add a little parm. salt, pepper... YUM.
The butternut squash cube and sautee in a little olive oil onion, peppers and sausage (I like JennyO spicy Italian turkey sausage) again...yum.
Butternut squash is good roasted in the oven with a drizzle of cinnamon and your choice of sugar sub as well if you're looking for something 'sweet potato' style. Then of course you could have sweet potatoes~

I LOVE spaghetti squash too!! My husband has never complained whenever I substitute noodles with spaghetti squash. I make a special sauce with home made turkey meatballs for protein and because my daughter loves meatballs, mushrooms, onions and such. This is one meal I can say works for my whole family :)
As far as sweet potatoes go, I make everything with it including baked sweet potato fries for my little one. She loves them sliced up, I toss them with a tablespoon of olive oil and then lay them out on a baking sheet, only takes 8-10 mins on 400 to cook flipping them halfway through so they can crisp up a little. She eats them with ketchup.
