Really? Maybe it is just here? Like I say, it sounds gross, but very yummy! Sold in the same isle as the tuna... There is ham, chicken, and turkey...

I make meatloaf about every other week. I prepare it in a bowl- ground beef, eggs and a few whole wheat crackers, season to taste and then fill a muffin tin with meat - one muffin section equals 1/2 cup and bake. you can freeze the rest and have easy to reheat meatloaf. I use a 6 muffin tin so I have one for that night and 5 for later.

Oh! I'm not  to that point yet but I absolutely love the idea of using muffin pans. I will definitely do that; except I'll make 24 or so at a time since my husband & sister are both watching what they eat, too.

i use www.skinnytaste.com i have found a ton of really good dinners on here.  my family loves the food i make off here too.  everything i tried i have liked & so has my super picky son.  good luck

Quiche can be for any meal- I made these last weekend and froze some for later- makes 24 tiny ones

 

Candy's Breakfast Mini Quiche    (teenage boy approved)

In a medium sized mixing bowl, combine

5 Eggs, scrambled (raw)
sprinkle of dried Basil and Oregano
 Pepper to your  taste  (I don’t use salt because of salty meats and cheese used later)

In a medium skillet

1 teaspoon Butter to sauté onion
½ cup sweet Onion, minced.  Sauté onions in butter till clear. Remove from heat

Add to skillet:  (Or any other ingredients you like!)
1 can Mushrooms, minced

2 precooked sausage patties, finely cut

½ cup real bacon bits

Dump contents of skillet into egg mixture, stir to combine.  Spoon into mini muffin  pan

 Preheat oven to 375 F. Bake for 15-20 minutes or until firm.  24 space mini muffin tin (mine is non stick from Pampered Chef).  Grease pan if not non stick.


Shredded Cheese for the top after cooking, I used Colby Jack

One of my fav's is chicken or pork with salsa in the crockpot, when its done I top with cheese, shredded lettuce and avocado, it is so yummy and juicy...I make alot cuz I have 4 adults eating at my house & the others stuff theirs into taco shells...Since you have a small crockpot I don;t see why you couldn't just modify it to 1 or 2 boneless breasts/thighs or 1 or 2 boneless porkchops & add enough salsa to cover the bottom of the pot, doesn't matter how long it cooks (all day if need be) cuz of amount of liquid produced...
