Since it's starting to finally act like fall, I am cooking like it's fall, including this yummy make-ahead breakfast. It reheats well and from my experience, freezes pretty well so long as you wrap it properly. Enjoy!

Fresh out of the oven!

Wanna bite?

I'll definitely be trying this, may make it tonight and reheat for tomorrow morning.  Oatmeal is one of the few foods that will cause my sugar to drop without added protein.  Nothing like warm oatmeal on a cold morning.

Now if I could find a great grit recipe with protein in it.  I like mine salty so protein powder just doesn't cut it.
