Spaghetti Squash?

I think it is ok but my hubs loves it. wants me to make it all the time! Try it and see how you feel because everyone has such different tastes.

I personally think that it is just ok. It is the only kind of squash that I will eat at all (other than pumpkin), though.

Some people say they love it as a substitute for spaghetti, and they serve it with sauce and cheese, but I tried it that way and thought it was pretty disgusting. Everyone has different tastes, though.

I serve it with spaghetti sauce. I bake the squash and then scrap it out.  It is different more of a crisp texture. :)

I made it over the weekend with a cheese sauce ( 1/4 cup lowfat mild cheddar mixed with 1/4 cup 1% milk and 1 tsp of flour to thicken) and it tasted like a hashbrown casserole to me.  It was my entire family's first time to try it, and they all LOVED it.  And the cheese sauce was PLENTY for the entire squash.  It was really delicious.

I like it well enough but the cost of a spaghetti squash usually deters me. Here in Baltimore, they are fairly expensive.

Does anyone know how far along in WLS journey you should be before adding this into your eating plan?  I'm curious - I'm on soft foods now - think it would be ok?

I'm pre op but I like it. It's pretty bland, takes on the flavor of whatever you put in it. It's crunchier than spaghetti, but I've only eaten it as a veg, not as "spaghetti." There are tons of recipes out there. You can even make it in the microwave.

I absolutely love it - I actually prefer it to pasta - and so do my kids and husband! :)

 

I do think one mistake some people make is not seasoning it.  I cut it in half, sprinkle with salt, pepper and granulated garlic and onion and cook cut side down on a cookie sheet at 350 for about 45 mins to an hour.  This way, it steams it up nicely and any excess moisture comes out the bottom.  It is soooo good! :)

My family and I love it! I bake it in the oven and serve it with pasta sauce with ground beef and mozzarella cheese baked on top. It's not very expensive here in NC thankfully.
