She loves it cold! Me --not so much. I spend the rest of the day trying to get warm. But we both need the walk so we just bundle up like Eskimos and walk fast!

good morning everyone!

I am on early today since I didn't have a ton of stuff in my email when I immediately got to work this morning...hoping this means it will start slowing down a bit and get back to normal. The beginning of the year is insane at my job, I really wish I could just take off the entire month of January LOL...oh well!

I am looking forward to tomorrow, we have our office holiday party after work and I signed up to participate in the "minute to win it" challenge--I never would have done this pre-WLS because I was just too shy and self conscious to have people staring at me...but I honestly have made a complete 180 and I feel like I am very outgoing and much more willing to look like an idiot now haha. so weird how just feeling confident in your skin can totally change your personality. well maybe not TOTALLY...I am still a huge nerd and mostly an introvert LOL...but I am much less reluctant to talk to strangers or put myself out there than i ever have been in the past!

QOTD1: I really wish I liked Mushrooms. I try to like them, I want to like them so badly...there are so many recipes that use them and LOOK so good, but I swear every time one ends up in my mouth I just gag. I just can't get past the dirt flavor and the slimy texture. I keep trying and I've had a couple instances where I could get them down but most of the time i just can't!

QOTD2: I bought myself a new coat this winter (I really couldnt wear my old one lol)...it's fire engine red with a black fur lined hood and I LOVE it...I have gotten several compliments on it.
I also got a super cute gray beanie with a little brown fur pom pom from DH for our "wool" anniversary and I wear it most days. It does tend to mess up my hair a little but I can deal with it for warmth! I got myself a nice pair of isotoner gloves that are black and white plaid print and my snow boots are white. nothing really matches but it all goes together just fine.

B: 2 turkey bfast sausage patties, 2 big thermoses of coffee w/pure protein shake (they were out of premier at my walmart last weekend so I am trying this one- it's pretty good, 30g protein and 140 cals/1g carbs)--and it's less expensive, so I will probably keep buying these.
L: leftover bacon Parmesan shrimp & cauliflower rice
S: greek L&F yogurt, light string cheese
D: bacon balsalmic brussels sprouts and 1 fried egg

cals: 810 , carbs :25, protein: 93

Amber, your menu looks amazing. What the heck is bacon parmesan shrimp?! I want some! Anytime a menu has two meals with bacon, I smile :)

And I also abhor mushrooms. And beets, for the same reason. Dirty and creepy.

Haha yes I do love to add bacon to things! LOL...the bacon parm shrimp is super easy and I make it a few times a month-
I just sautee about 2-3 slices of bacon-chopped, with a small diced onion...add a little garlic, and then I add 12 oz of shrimp with some italian seasonings, like oregano,basil, garlic powder- some salt/pepp.
add in cauliflower rice (I buy the frozen one at aldi for speed/convenience, and cook the whole package in the microwave first but you can easily make your own).
remove from heat then add shredded parmesan just long enough to melt (probably about 1/4 cup of cheese for the whole recipe)...sometimes I add a little extra cheese to top it off after plating...but it comes out to about 226 cals/6 carbs/26g protein for 1/6th of the recipe. (about a 1 Cup serving size). sometimes I can't eat even a whole cup of it but its SO good.

Ah..yes on the mushrooms. I even tried portabella as a pizza "crust" after surgery.....GROSS!

Seriously mushrooms are gross! Definitely the texture. Also...they're FUNGUS! I mean, give me some blue cheese, no problem - I'm apparently fine with eating mold - but not fungus.

Agreed -- whoever decided to eat blue cheese first was a brave GENIUS....but the person that decided to eat the fungus is right there with whoever decided let me try to make coffee out of the beans in this civet poop.
