We always have lots of rotisserie chicken leftover, since I buy one and hubs is the only meat eater in the house.

You can:

make a quesadilla, use some carb smart tortillas, cheese, and heat the chicken up with some sauteed veggies.

Boil some pasta, toss with some parmesan and veggies (if you choose)

make some chicken salad, serve on crackers or with pretzels/toast

make some chicken nachos, refried beans, cheese, sour cream, tostadas...

I don't know if it helps, because when people get something in their head it's hard to get it out, but I went and read the CDC warning for Italy. They are only requesting high risk divert and only then for non-essential (Italy). The warning for mainland China is much more aggressive. That could change by April of course, but it could also go back to level 1, which is where it was before (same as US, due to measles!).

On the other hand, looking at the areas with minimal to no cases, might be a great time for that African safari, lol

Well our trip is so non-essential but I have zero qualms about going...I am just nervous that either Kris' parents or more so, his ex-wife, will put the kibosh on it. We didn't pay for trip insurance so I will pretty much kill myself if this trip gets canceled.......

Please pray for going back to level 1 :(

Do you have high risk people in your group? Otherwise, non essential is still ok! Hopefully, it will resolve itself well in advance, that's the best thing.

i switched to an annual travel insurance policy last year, it's less than travel insurance on individual trips but I think only worthwhile if you have a couple big ticket trips a year.

Well, Kris' parents are old-i****hink 66 and 71? Very healthy though.

I just called the trip company IN CASE we have to cancel (I will be so so so sad) and we will lose $300 per plane ticket ($2,400) and potentially the hotel. So not the ENTIRE trip cost but still...ugh...ugh...ugh...

I am still going to Belgium in 3 weeks :)

Oh god, I am so stressed on your behalf. I mean, I am the type of person who wouldn't mind taking the risk for myself but I also don't think I would be comfortable taking children.

I like the Folios--they are just cheese, but they fold a lot better than cheese so you can wrap them more easily than you would a regular piece of cheese.... But my favorite thing to do with them is throw them in the oven on top of an upside down bowl for a few minutes and let it bake into the shape of bowl. Then fill it with salad and you have the carb free crouton as the bowl :)
