Flavored tuna packets. They require no refrigeration and have great specs. Boiled eggs are great too.

Love all of these!

I just got a thing of the rotisserie chicken from costco... sooo counting down when I can ACTUALLY chew my food and it not "squish"

Fluffy scrambled egg beaters with fat free cheese - no fat content is an advantage with nausea ( I still have issues eating whole eggs cuz of the fat )

  • beat together egg beaters, skim milk powder slurry or a bit of fat free half and half, butter buds put in sprayed hot pan, add a slice of fat free American cheese - yum! ( extra good served w fresh salsa)
  • this egg mix can also be used to make a Western omelette- just add diced onion, peppers, mushrooms...
  • you can use different type of cheese or even add a spinach/fat free feta/onion/garlic /ricotta or cottage cheese filling

Air fried Eggplant Parmesan- slice an Italian eggplant thin- dredge in egg mix first ( egg beaters greek seasoning or whole egg)

drain, then dip in Italian spiced bread crumbs ( I mix in butter buds too for taste ) . Place 4 slices at a time in 450 pre warmed air fryer for a minute, turn remove when crispy on the outside.

I make homemade not - too- sour quick tomato sauce with Hunts four cheese or meat flavor sauce ( canned, cheap) as a starting base- I add this to fresh garlic and diced onion, sautéed, add some extra Italian spice seasoning to taste , a bunch of butter buds and often my secret ingredient ( some Alfredo sauce mix mixed with butter buds and skim milk) . This basically makes a Milanese style cream tomato sauce like Vodka Sauce without the vodka.

Then I take fat free ( or half fat if that's all I can find ) ricotta cheese , mix into cooked Creamy pesto sauce again incorporating lots of butter buds and skim milk powder ... and layer with sauce in a small oiled casserole pan also adding Parmesan Cheese .

Since fat free ricotta is a rare find ( I usually buy all I can and freeze it when I do find it ) you can substitute fat free cottage cheese - just use a lot less milk cooking the sauce because cottage cheese contains a lot of water.

Technically ricotta IS just squeezed out cottage cheese .... you Can make your own in like five minutes using a colander and a bit of cheesecloth ...

Bake at 350 until it bubbles up and smells good :) . Your family will also like this - just give them pasta or garlic bread with it . Makes really good fat free eggplant Parmesan subs too :)

I just tried her ricotta bake last week and it was really good! I will check out more of her recipes!
