LOW CARB WHITE CASTLE CASSEROLE

For authentic flavor, top each serving with dill pickles and mustard!

This recipe freezes well. READY IN: 1hr SERVES: 4 UNITS:

INGREDIENTS 1 lb ground beef

1 (1 ounce) envelope onion soup mix

2 eggs

cup mayonnaise ? cup heavy cream

8 ounces cheddar cheese, shredded

salt and pepper, to taste dill pickle slices, for topping mustard, for topping

DIRECTIONS

Brown the hamburger with half of the onion soup mix; drain fat and season to taste with salt and pepper. Stir in the remaining soup mix and put meat in a greased 9-10 inch pie plate. Stir in half the cheese, then top with remaining cheese. Beat eggs, mayonnaise, cream, salt and pepper together then pour evenly over the meat. Bake at 350ºF for 30-35 minutes. Let stand 10 minutes before serving.

This is super yummy.

I do a scoop of cottage cheese with my meat. Added protein and it eases on down better. Works great with meatballs and marinara, reheated chicken (I make the meats bite sized, warm in the microwave, add a scoop of cottage cheese and yum), gyros meat, sausages. It all works for me.

I don't struggle with dry meat like I used to with my revision, but microwaved meat can still bother me. I prefer to reheat in the air-frier now!

Quite frankly I just give it bite by bite to the catz .

Sauces used to work for me .... kinda sad they don't anymore.

You can try .... I'd use fat free butter solids as opposed to real fats ... fat free half n half ... and powdery sauce mixes of all types fat free... very healthy and interestingly flavored .

it's funny now but the prescribed diet to avoid pancreatic inflammation ( and a huge risk of incurable cancer ) is a fat free diet lol ! Who knew ?

Thank you everyone! I have started being "saucier" and that seems to have helped. I do warm Up in my skillet when i can, i don't have an air fryer so that's out.

trying the turkey meatloaf after thanksgiving!!!
