What's on Taco Tuesday's Menu?

Happy Tuesday!!! Feeling so much better today. Still don't know what the heck was going on Sunday, but just glad it has passed.

Nothing much going on at work today and it looks like we will be getting some much-needed rain on Thursday and potentially into the weekend. I have another half day Friday, and we are getting turkeys for all the employees along with a $50 gift card for the holidays then also.

While I know it's technically "taco Tuesday" there is a local Pizzaria that makes a killer Thanksgiving pizza and I think a couple of co-workers and I are going to get one to split.

QOTD: What do you all do with holiday leftovers? Since its only my husband and I there aren't to many side dishes made and most of them will have enough for a day or maybe two afterwards. The only thing we have a good amount of is turkey. So I usually will carve it all up and freeze some of it for turkey soup or turkey salad down the road.

B: coffee and protein shake

L: maybe pizza?

D: chicken burgers and salad

I am so glad you feel better.

I have a quiet day today. A dentist appointment tomorrow and pretty much nothing else this week. Think I will schedule a pedicure. I am going to go through all closets and drawers for donations but might wait until after Thanksgiving.

I made fresh cranberry sauce last night and going to pitch it. There are little bits of leaves or something in it. I am going try again but see you have to really clean the berries carefully first. First time not out of the can.

I am defrosting a 3 pound boneless turkey breast. Still deciding what to do with it. Brine? oven? InstaPot, or crockpot? I will be at my sisters Thanksgiving. I love turkey so this one is for me. Sometimes they come out too dry. I am hoping to have nice, juicy meat for home.

Good morning all and Happy Tuesday,

Even though it's already Tuesday, the weekend was really nice. The Anniversary dinner went well. Paula enjoyed herself and a good time was had by all.

Yesterday was my bone biopsy. No fun was had. I don't like hearing the words drill, mallet, and bones in conjunction with one another. It was rough and they couldn't biopsy the area by the hip flexor tendon due to risk involved. I'm content with turning it over and knowing what will be will be.

QOTD- I keep some leftovers and freeze them. I make plates up of the great majority of leftovers and distribute to those in need.

B: coffee and yogurt.

L: Grilled octopus and peanut butter sandwich. Well, maybe just the octopus...

D: Baby back ribs.

Mornin' All!

I need to start posting again - it does help, plus I don't want our thread to die out!! I'm glad to see some people still posting. This does seem to happen once in a while when there's a change in "thread starters" - but fortunately, it's usually temporary. Thanks for starting us up the last few days, Lady Godiva!!

not much going on this week, which is good because between a few really busy ones and the recent election, I need the break. I have class today, but that's it. I'm going to try to plow through some of the book I'm supposed to read for my book discussion group meeting next week. I'm caught up with classes except for the one I decided to quit going to - but since I've left it, there's no need to get caught up!

QOTD: we won't have any leftovers this year since there will just be three of us, so I ordered take-out meals. I'll just put a message on our neighborhood Facebook page about turkey carcasses. I like to make (and freeze) turkey stock after Thanksgiving, so I'll be in the market for a carcass or two. I usually get responses - some people otherwise just throw them out. As far as past Thanksgivings, I've usually frozen sweet potato casserole. I've also frozen stuffing, but unlike the sweet potatoes, it's not that great after thawing and re-heating. And we usually finish up eating turkey after three or four days, so we've never had to freeze that.

plain skyr with either blueberry or apple compote

vegetarian chili or a Mexican-style salad

protein shake or protein muffin

whatever I don't have for lunch, I'll have for dinner

Good morning everyone!

Saturday was an example of how WLS changes our lives in ways that we aren't aware of except right after surgery.

We didn't really know exactly where we were going, so we pulled off the highway and went into the free parking lot. We got out of the car, found out that we were about 1.5 miles walk to the stadium, decided no problem, and set up for our tailgate.

Because we didn't think twice about a long walk, we (a) saved 30 minutes of bumper to bumper traffic looking for a lot, (b) saved $40 in fees because we were in the free lot, (c) had bathroom access, and plenty of room to spread out our picnic area, (d) saved probably an hour of excruciating traffic getting out, since we were right at the highway. Plus we enjoyed the walk.

Pre-surgery, I am sure that I would have wanted to park closer, despite the cost and traffic.

I have a full day of program today and tomorrow is a travel day home.

QOTD: We will survive on leftovers for the weekend. Usually the kids are out by Friday, but me and Marilyn will eat most of the leftovers.

Breakfast: Ham and eggs

Lunch: pizza

Dinner: Steak

Your right that walk never would have happened pre surgery. I felt bad for the pregnant lady, but she didn't seem to mind. I think where we parked was a win win all around.
