Yummm...machacas at IHOP!

DH just took us all to breakfast at IHOP and we got machacas.  I suspect that's a Tex-Mex thing, so for those of you who don't know what they are--it's scrambled eggs with chunks of shredded beef, cheese, and jalapeno peppers.  You roll it up in corn tortillas with salsa.  Oh MAN that's some good eating!!!  Unfortunately, I could only eat about 3/4 of 1 tortilla.  But still, it was sooooo yummy.  DH ate the rest.

Anyone else like machacas at IHOP?

I've never heard of it, but man it sounds good.

My 4 year old and I like to make homemade tortillas together.  Maybe we will try making machacas too.

Ive seen them on the menu, but never gotten them. They sound good tho.. I like thier fajita omelets...thier really good...but so huge...lots of good protein tho

I love Machaca, but had never heard of it at IHOP

I love almost all Mexican, Tex-Mex and New Mexican foods.  I was first exposed to it when I was in a boarding school in Santa Fe, NM in the 1950's, and our cooks would make Machaca for Sunday breakfast once in a while.  Also freshly made Sopapillas, with *****ly pear cactus jelly!  Yum!!!!

Machaca is very easy to make at home.  AND, it is very high in protein, especially if you don't eat it with tortillas.

I LOVE machacas, easy on the peppers made with eggbeaters.  MMMMM good to know I can eat later.
