rice paper rolls for everything! is this a new idea or not?

Okay, I've been away from this forum for a while so I don't know if this is a new idea or what.

The other day, I was at Thai food and ordered spring rolls... the soft kind that aren't fried...
It occurred to me, as I was staring at the shrimp inside the veil of clear pressed rice, that these rice paper wrappers were majorly low carb and that my VSG tummy would find it acceptable.

I bought some rice paper and made myself a delicious hot sandwich wrap with melted cheese, salami, pepperoni and mustard.  Perfect lunch for a girl on the go.

then I realized that I could use it as a wrapper for all kinds of food...

breakfast burrito for when you're on the go...
a wrap for sandwich fixins...
a small clear burrito...
anything that is supposed to be held together inside a bun, bread, tortilla or pita...

The genius of it is that it's so cheap and easy to make.  You go to an Asian food store and get sheets of "extra thin" vietnamese rice paper.  then you run it under water for a few seconds and lay it on a towel to soften up for a moment.
Then it's ready to use just like a tortilla!

I have maintained my 75-pound weight loss (232 top weight, 157 current) but my nutrition is getting sloppy.  I am going to start looking to this forum for VSG recipe ideas.
I can't wait to find out what I can put in these rice paper wrappers to improve my diet.

What a great idea! Your suggestions are great and rice paper can replace tortillas and bread in a lot of applications.

I guess I had never considered using rice paper because it was mysterious (so I thought it would be hard to cook).  It's so easy it's a joke!  You just run it under water.

I love the spring rolls in Thai restaurants and never thought of other uses for rice paper. I'll have to get some at an Asian market and try them out. From your description they sound easy to prepare.

Tonight on Cooking Yourself Thin they made the same suggestion. They showed a made-at-home shrimp spring roll, but suggested using the wrapper in other scenarios. I was just wondering about carbs. Thanks for your input. I love all the info I get from OH. Robin

Great idea. According to Daily Plate 3 rice paper wrappers have 100 calories: .03g of fat : 22.5g of carbs: 2,5g of protein.  That's not bad at all, but it's more than I would have guessed for such thin wrappers.  Low carb tortilla's have twice the protein and comparable carbs (5 to 7 each), but the far more fat (60 to 100 each).  

All in all - rice wrappers seem to be a good option.  I'll have to give them a try.  Thanks!!

Yeah, I think the smallest ones have 5g of carbs,  the bigger ones 7... something like that.  I ate a low carb tortilla once... I hated it.
