Sausage Egg Muffins-YUM!!

The recipe was posted earlier by elaine2 and I just had to try them.

In the prep stage


Finished product (still in the pan because I forgot to spray it before filling it!!)


They look a little ragged because they were stuck to the pan. I never professed to be a great cook, I always forget something! LOL! This time the cooking spray!

The recipe version I used was:
1/4 Jimmy Dean Turkey crumbles (put in bottom of the pan)
sprinkling of red peppers & white onions
1 whole large egg (beaten and poured on top)
Baked at 400 for 28 minutes (I dont like soft eggs). Note the muffin pan is FULL so when you bake they can "puff up" and run over the side of the pan (mine did!!). I plan on putting a dab of plain greek yogurt on top before eating.
110 Calories, 14 gr protein & less than 1 carb (without the Greek Yogurt).

 These are staples in my diet except I prefer to use egg whites. I'm going to try adding peppers and onion - I usually just do sausage and cheese. Yummy!!!

They would be a lot fewer calories and cholesterol with eggbeaters but i wonder if they would hold their shape? Looks like you used a lot of onion I hope you took your acid blocker lol

I have never used eggbeaters but I may try them next time. It really looks like more than what it is however I LOVE onions. I'm VERY thankful they agree with me post-op! :)

 I use liquid egg whites and they turn out great and hold their shape.

Glad you like them!
Almost daily for lunch for me.
Easy to take to work and zap in the microwave.

A variation on the eggface egg bites---I use her eggbite recipes to get some other flavor combos.

Edited to add----Yes, eggbeaters work. In fact I use those most of the time. 

                             And the photos are great!

Oh my gosh, those look soooo good!  I am in the middle of my two week liquid protein fast and would sell my left arm to eat one of those!  Can't wait until I am able to eat food again!   Thanks for sharing, I am filing it away for future food ideas!

Aww!! Im sorry! I know how hard that 2 week pre-op diet is. It is tough!! Hang in there!!

you can do the same thing in the microwave - spray coffee mug with nonstick spray, add ingredients and microwave about 1 minute.  I like to make them one at a time so I can make them differently - kinda get tired of eating the same things over and over.  Adding spinach and mushroom is also good.
