(Not) wholly inappropriate food porn, *but could be triggery for some*

Had to put that warning in, as I know some of us struggle a lot with the head hungries, I don't want to be mean! But, I also wanted to make sure folks knew there are alternatives to higher-carb bready, biscuit-y, or desserty baked things.. Enter nut flours.

I'm basically in maintenance at this point, so I am upping my cals/carbs etc here and there.. but, this is low carb enough that it would fit in with a lot of plans out there.. in the right serving sizes. Not necessarily an "everyday food", but something occasional to enjoy when your plan allows.

Baking low carb is something new to me. Nut flours are not going to taste the same as wheat, but nutritionally, they sure can pack a  better bang for what you do make! I'm sure to be trying quite a few in the coming months, but here's my first foray into low-carb baking, made in an 8x8 pan:








What I was holding was a double serving, a single serving (about an inch square, what I actually ate) comes to: 98cals/9carbs- 2 is fiber and 3g protein.) This was very satisfying & yummy, and used up some frozen berries I needed to get rid of!

 Looks amazing!

I have played a bit with nut flours. The best I have come up with is an alomnd meal cookie with hemp hearts and raw coco. I will have to search for the recipe again, but it comes out pretty tasty. Low carb, gluten free, with some protein even!


Nice to know about healthy alternatives :).

 In my Atkins days, I used nut flours (and coconut flour) and low-carb bread mix called CarbQuick (which you can get on Amazon now -- and it was way better than other low carb baking mixes).
