Uses for Bok Choy

I'm making Elina's Green Chicken Soup. The bunch of Bok Choy is huge and I've really never used it.  What else can I do with it?  What does it taste like?  I hope I like it:)...the Bok Choy that is.

It tastes a little bit like cabbage only milder.  I love to saute it with a little oil and salt and serve it along with any meat.  It is a yummy veggie, one of my favorites.  You can also saute it along with other veggies and any sauce you want to make a great veggie side dish.

It is very mild. I like it for the texture. It is great for soups and even just sauteed. You will find it in a lot of Chinese dishes. It is so mild in taste it really takes on the taste of whatever sauce the dish has. I love it. I love any greens though!
