My spin on Elina's chicken soup
I hate left overs. But I hate throwing away food too. So a solution: a tasty (different) version of Elina's green chicken soup.
I used the meat of 2 chicken thighs that I had made in the crock-pot (about 12 chicken thighs with 1/2 small bottle of hickory smoke bbq sauce), 4 small zucchini, mexican green onion, 1 cup chopped green cabbage, turmeric, salt & pepper, little dill weed, 6 cups water and 1 tbsp chicken bouillon. I simmered it until the veggies were soft then blended it in batches. Yum Yum!!! I think the bbq flavor from the chicken gave it a little something extra. It made enough for about 6 meals. (I am 9 months out). Don't be afraid to experiment and try new things.
