Recipe of the Day - Stuffed Chicken with Spicy Roasted Red Pepper sauce!
Ok, so, I've seriously reworked this recipe but it's mostly the same :)

Instead of using chicken breasts, I use the thin sliced cutlets. I don't particularly care for goat cheese so I swapped that for ultra thin provolone (Sargento brand) and instead of a jalapeno, I just added some red pepper flakes to the sauce. Additionally, my husband is a little "meh" when it comes to roasted red peppers so I only use one giant piece for the sauce and add extra balsamic vinegar and don't stuff the chicken with extra red pepper strips. See? I told you I changed it A LOT but it's very versatile and quick to make! :)
I did flour the chicken cutlets for better browning in the fry pan and then I put one piece of provolone and a few asparagus spears, folded them over, and use the pointy side of a mallet to pinch the edges closed. Brown on either side and then add your sauce! Yummy!
