Super Bowl party food...

Yes, I looked in the recipes forum, but there's not too much in the way of party food. I got invited to a Super Bowl party and I want to make something delicious that the others will like, but will still be safe for me to eat. I love to cook, and I can follow a recipe very well. Thanks guys! I know you'll do me proud! ;-)

I make a buffalo chicken dip....DELICIOUS!!

you can dip it in all sorts of veg and bring a bag of pita chips or nachos forth either party goers....

you can google the recipe...

i use the one that calls for rotisserie chicken

What about a 7 (or however many) layer dip? Quacamole, refried beans, light sour cream, cheese, tomatoes (or salsa), lettuce, and black olives! Yumm-O! And if you want to avoid chips, you can always dip veggies or just eat it plain since it has so much flavor already!

I like to make meat balls and then I put out a couple of sauces to dip them in if people want it. Also you can get hummus and a platter of sliced cucumbers.

I'm pre op, but my faves are buffalo chicken dip, spinach artichoke dip, and chicken wrapped with bacon. I think you can probably make any of them healthier. You could substitute Greek yogurt for sour cream, use lower fat options or change ingredients if you're watching carbs.

Caprese on a stick - layer cherry tomato, ball of mozzarella and fresh basil on a toothpick.  You can drizzle with olive oil/balsamic or not - your choice.

Or a selection of nice cheeses?

Cheese and meat platter might work. I don't know what you're doctor allows at what phase but that would work for me. :)  May not satisfy your desire to prepare something though.

turkey meatballs...pretty easy with a low sugar/low carb bbq sauce and grape jelly (Sugar free) in a crock pot.  REALLY easy

I love some of the ideas above but I have been avoiding things that need a carb to be dipped or spread on.  I'm not on full solids yet (nothing crunchy, like a cracker or chip) and still no bread, etc.  For chips...the rice chips are really good but even those are no longer healthy if you exceed portions.  And hey...I havent been known to "just eat one".  Thats why I like meatballs.
