I too have stopped tracking and have hit a stall.  In fact, gained a few pounds.  Tracking is a pain, but keeps your ship on course.

At 2-1/2 years post-op I still track my food...every single day.

Ditto! I took a break for a few months (shrink initiated), but have been back to it for almost 2 months. It's working. Besides, I have never considered it a pain or bother. The measuring sometimes gets old, but I do it anyway.

Such a pain and I tend to slack on the weekends, but very important to the end goal.
