I need to change up what I am eating still I have been at a stall for almost 2 months now. I need to reduce my carbs, increase my exercise, increase my vegetables. I am getting tired of just eating chicken. I am craving meatballs.... any recipe suggestions that are "easy" and "simple"? Thanks!! :) I have 4 lbs to go to reach my goal but I am having a terrible time getting that off!!! LOL

I made these without the sauce a while back: http://damndelicious.net/2014/10/15/asian-quinoa-meatballs/

They came to 49 calories per meatball with 5 grams protein and only 1 carb.

These are my favorite meatballs.  The recipe comes from "Lauries Low Carb Cookbook"  which is my favorite for this diet.  The pork gives it a nice moistness and flavor.  I make them about one ounce each, and freeze them.  Then I can pop them out and have  a quick meal.  I'll have them with sauce sometimes, but often just with a little parmesan cheese.

Laurie's Meat Balls

Ingredients:

2 pounds of lean ground beef

1 pound ground pork

3 eggs

1 tsp garlic salt

3/4 tsp black pepper

3/4 tsp thyme

½ tsp sage, ground

1 Tablespoon Worcestershire sauce

Directions:

  1. Beat eggs. Add seasonings and Worcestershire sauce. Beat well.

  2. Add meat and blend by hand. Form meat balls.

  3. Place on a cookie sheet with a rim, and bake at 400 degrees for about 20 minutes. Cut meatball to check doneness. Drain on paper towel and serve.
