Steamed Coleslaw

I don't know why I've never done this before.

For my meal tonight, I took some coleslaw mix and steamed it, then tossed it in a dab each of rice vinegar and balsamic vinegar. It was AMAZING!

If you like cooked cabbage.

I love cabbage. I'm the only person I know who liked it! Did the texture of the steamed coleslaw come out very soft, or did it retain a bit of crunch? I was never a fan of coleslaw unless it was crunchy.

I steamed it til it was pretty soft (I LOVE cooked cabbage) but you could definitely steam it to your desired crunch...maybe just a couple min? Try it and see!

I love cooked cabbage too. For later (after surgery and you are allowed to have ground meats), you would probably like Crack Slaw. If you google for it you can find a few differing recipes to give you ideas, but it is basically what you just described with cooked ground meat. I like it as a filling tasty dinner.

YES! crack slaw is the best and has been a staple for the best part of the last 3 years!!!!you must print and tuck away this recipe.

I also make a version that is similar to cabbage rolls minus the rice. I add a low carb tomato sauce with burger and cole slaw mix, so good!
