RECIPES:

I had this in my head and just decided to make a recipe. It was really good!

Debbie King's Gumbo
INGREDIENTS:

* 3 Tablespoons bacon grease (you will use this to the end)
* 1 cup diced white onion
* 2/3 cup all-purpose flour (I use gluten free)
* 1 diced orange or yellow bell pepper
* 3 cloves garlic, crushed and chopped
* 2 Hot Links (sliced long way to tell where it is or crosswise
   slices if all like it hot) (Can use 2 tablespoons Cajun seasoning
   instead of Hot links.)
* 8 oz. Hillshire Farms smoked sausage (1/2 a package), cut into
   crosswise 1/4" slices
* 2 cups diced cooked ham
* 4 cups beef stock (2 cans)
* 1 tablespoon Worcestershire sauce
* 1/2 teaspoon black pepper
* 1 can okra in tomato sauce, use sauce too
* 1 drained can of whole corn


2 cups cooked rice or enough for 8 servings to add to bowls (unless you are low carbing )
Pan of cornbread to go with it.

PREPARATION:

Combine bacon grease, sausages and ham in a large sautépan you can use a whisk on later. Cook over medium heat until lightly browned. Dip meat from pan, saving grease and put meat in another large gumbo pot or crock pot.

Add the onions to the bacon drippings in the sautépan and cook until translucent and lightly browned on edges.  Dip onions from pan, saving grease and put onions in the other large gumbo pot with meat.

Add the bell peppers to the bacon drippings in the sautépan and cook until the vegetables start to turn tender. Dip the bell peppers from pan, saving grease and put the bell peppers in the other large gumbo pot with meat and onions.

Add the okra with tomato sauce and corn to the gumbo pot.

Cook 1/4 cup bacon grease and 2/3 cup all-purpose flour over low-medium heat in sautépan, whisking constantly. When the roux is lightly browned, add broth a little at a time until all is in pan, whisking constantly. Add black pepper, garlic, Worcestershire sauce (and Cajun seasoning if you didn't use Hot links) to the pan and continue cooking and stirring for about 5 minutes. Pour in big gumbo pot or crock pot and bring it to a gentle simmer and cook it, uncovered, for 1 hour. (covered on high for the crock pot at a simmer for an hour.)

Cook the rice according to package directions and set aside to keep warm.

Make the cornbread to serve with the gumbo.

To serve the gumbo; place a scoop of warm rice in the center of a large soup bowl and add a ladle full of hot gumbo. Each person can add hot sauce, as desired.

Place butter on cornbread and serve on a plate beside bowl of gumbo.

Makes 8 servings

"Mom's Hamburger Pie"

Butter or Margarine
1/2 diced onion (or more)
small can sliced drained mushrooms or fresh as much as you want, sliced.
2 pounds hamburger (Can use any ground meat, I use Elk or Deer.)
1 finely minced clove garlic
salt to taste (If you use anything other than mild cheddar cheese it may be to salty at the end)
pepper to taste
small can tomato sauce
package of good spaghetti dry mix
can drained green beans
instant mashed potatoes, about 6 servings or make from scratch if you have the time.
Mild cheddar cheese, grated

I use a 12" electric skillet. Cook mushrooms and onions in butter until done. Brown meat until done. (If you use meat with a lot of fat, pour this off.) Add garlic, salt and pepper to taste. Pour in spaghetti dry mix, tomato sauce and 1 can water (or what the spaghetti mix says to add), drained green beans and 3 tablespoons of butter. Simmer this and make the mashed potatoes. Dollop potatoes in 6 mounds on top of the mixture and top with grated cheese. Place lid on this until cheese is melted.
I make home made biscuits and split them apart and spoon mixture on top of each half. Since my DS surgery I have used cornbread instead of the biscuits or just eat it in a bowl and figure the potatoes are like the bread.
