Protein Pumpkin Mini Muffins (Wingin' it!)

Preheat oven to 350 degrees

Ingredients

1/2 cup pumpkin purée 

1/2 cup greek yogurt

1/2 cup almond flour

2 tbs coconut margarine

1/4 cup SF vanilla torani syrup

1/4 cup baking Splenda 

1 tsp pumpkin pie spice

dash of salt

1/2 tsp vanilla

1 egg

1 1/2 tsp baking powder

 

mix all wet ingredients and then fold in dry ingredients 

grease the heck out of the mini muffin pan with cooking spray

fill the muffin cups to the top

bake for 12 minutes or until knife comes clean 

makes 18 mini muffins

Blend:

1 avocado

1/4 cup chocolate soymilk

pinch of sea salt

1 tsp vanilla

1 ripe banana

1 heaping scoop of chocolate protein powder

portion into 1/4 cups and chill in fridge

Day 5: 2 Week PreOp Liquid Diet

So it's been going ok! I have been following my pre-op diet to the letter. I have resisted food offered. And, it's already showing up in my weight loss. I started at 301.5 right before I began the liquid diet. This is my highest weight ever. As of today, 5 days out, I weigh 294.3! 

My surgery is in 9 days. I wish I had a cheeseburger.

Day 1: 2 Week PreOp Liquid Diet

Yesterday I ate like I was on death row except instead of one meal of my choosing, I just kind of grazed all of my favorites. I ended the evening with (carrot) cake and ($27 a lb aged) steak. I arranged my emptied out pantry with my many boxes of mandatorily purchased protein powders and vitamins. Or, pills and potions as I have dubbed them. My sweetie made a bunch of food out of our extras and we dropped some off to the homeless dude in our neighborhood. Maybe there was a couple of beers in there too. 

New Direction is the brand of protein shakes Sacramento BMI has me taking.

I woke up on my first day of Bariatric imposed liquid diet feeling excited to begin my new life. I chose the mocha protein packet first and mixed it with cold coffee. I wasn't totally sure the mocha was going to be very good so better to get it out of the way in case. It's pretty good! Kind of a salted chocolate iced mocha vibe. 

Around lunch time I felt my stomach rumbling so I made another protein shake and paired it with a single serving cup of no sugar applesauce. I also took my vitamins. 

 

4:24 pm HUNGRY

 

7:54 pm just about to make my last protein drink of the day and I have not floated away. 

 

13 more days of this. Help.
