Ingredients

  • 336 g egg noodles, cooked and drained
  • 170 g fresh mushrooms, sliced
  • 1 onion, chopped
  • 55 g butter
  • 910 g lean ground beef
  • 30 g all-purpose flour
  • 475 ml beef broth
  • 230 g sour cream
  • salt and black pepper to taste
 

Directions

  1. Bring a large pot of water to a boil. Cook egg noodles in boiling water until done, about 8 minutes. Drain.
  2. Meanwhile, prepare the sauce. In a large skillet, cook mushrooms and onions in 2 tablespoons of butter over medium heat until soft; remove from pan.
  3. Using the same pan, melt remaining butter. Cook ground beef in melted butter until browned. Mix in flour. Stir in beef broth, and cook until slightly thickened. Add mushroom and onion mixture; stir in sour cream. Season to taste with salt and pepper. Continue cooking until sauce is hot, but not boiling. Serve sauce over egg noodles.

Chickpea snack!

crispy roasted yummy chickpea snacks:

1 can of chick peas, drained.
1 tbsp olive oil
flavourings of your choice.

i used lemon juice, ground cumin, salt and hot sauce.  mixed em all up with the seasonings and olive oil till they were very well coated.  put them down on a parchment lined cookie sheet in a single layer (or else they won't brown up properfly) in a 400 degree oven.  they will brown up, get crispy and all shrunken.  you know they're ready when they're all dry inside. (taste them!)

i roasted them in the oven for about an hour.  and i shook them around every 15 minutes or so to make sure they were cooking evenly and not burning.

salad recipe

6 - 8 roma tomatoes
1 vidalia onion
1 or 2 any color pepper - I like green and red
Feta - low fat - fat free - full fat - I have used them all
Good quality salad dressing - I use Paul Newmans Italian or oil and vinegar or Kraft feta and herbs

Take the ends off the Roma's and cut in half - I run the knife around the inside to remove the seeds and the pulp- discard this - then chop the meaty tomato part
Add 1/2 chopped vidalia onion- or more to taste
Add one or two chopped peppers - I add two for vitamins
Add LOTS of feta
Maybe 1 or two tablespoons of salad dressing - you can always add more later -
lots of pepper

cauliflower pizza

ok, so i read about that low carb cauliflower pizza recipe.. either here or on the vsg board, i don't remember.. and i thought i'd try it out.

i used my food processor with the big grating blade to "rice" the cauliflower.  it turned out FANTASTIC.  it held together well enough that you could pick up the pieces with your hand and it didn't fall apart. the edges got nice and crisp. i used part skim mozzarella, marinara sauce and turkey pepperoni, but i'll definitely get more creative when i make it again. the full pizza (4 slices) has 594 cal, 17 grams of carbs and 51 grams of protein!  i could only eat 2 slices, so less than 300 cal, and 25 grams of protein!  it was definitely a taste treat!

VSG Week by week reminder sheet

2 weeks pre op : Freak out and have doubts - Plan Of Action (POA) : remember why I wanted this in the first place.

Week of surgery: Whining, gas,pain, worry that "I" am the rare one with a leak, gaining weight because of IV fluids - POA - walk, sip, burp, try to be calm.

Weeks 2 and 3 - Buyers Remorse, tired, - POA - remember why I wanted this in the first place.

Weeks 3 to 6 - Stall, Hormones leaving fat cells - POA -Take measurements to see improvement there and forget about the scales for a while.  Remember these emotions are normal and temporary from the release of hormones.

Weeks 6-24 - Hair loss, Honeymoon - POA - Try Biotin or Neo Cell Collagen or just suck it up princess, it's temporary, Celebrate weight loss with more energy and therefore new exercise routine.

6 mos on - Should be healed, remember the basics, no drinking a half hour before or after meals, minimum 64 oz water, 75 gr protein, exercise, continue to enjoy honeymoon period and work it!

Any contributions, changes to time line would be much appreciated!
