NIK'S PESTO ASIAGO TUNA BURGERS

Nik's Pesto-Asiago Tuna Burgers1 can (4 oz) tuna in water, liquid reserved
1/4 c. textured vegetable protein (TVP)
1 large egg
2 tbsp fat free greek yogurt
1/2 tsp. mayo (I used the real stuff but you can also get away with lowfat)
1 tsp pesto seasoning (from a packet)
1 oz. asiago cheese cubed small
Directions:
1. Combine TVP and tuna juice and set aside for about 3 minutes. It will expand and will be more voluminous than it started out.
2. Combine mayo and greek yogurt and mix well. Add pesto and mix again.
3. Combine TVP, tuna and cheese and mix well. Fold in greek yogurt mixture
4. Add egg and mix thoroughly.
5. Use an ice cream scoop to create uniform sized balls which you should flatten into patties in your hand. They will be fairly wet. Plop them down in a hot pan over medium heat (that has been pre-sprayed with cooking spray) and cook about 4-5 minutes each side.
6. Serve hot.
