60 pounds gone

Jun 21, 2009

It's been a while since I have updated. I have finally lost 60 lbs Thank You Jesus! This has been the hardest year of my life.
But I have never lost 60 lbs before in a years time. I am grateful. I am a slow loser but I am still fighting this battle. It may take me a couple of years but I wil get there. Food has no control on me no longer. This band has it's moments. I named her Sybil. You never know what's next. The last three months I have done strict low carb under 20 grams. I lost 9 lbs in the 1st month induction. Then I lost 4 but the scale kept going up and down the same lbs. Then I decided to just go low carb
slimfast liquid diet. I did this on my pre op diet and lost 28 lbs in 2 months. I have lost down to 214 yea! My goal for this summer is to get to onederland under 200 lbs. I would love to lose more but this is realistic. I swim everyday for about
1 and half hours or I walk 4 miles. I did this Leslie Sansone waist trimmer workout the other day I was impressed. You walk 5 miles an hour and you have a waist belt with resistance band handles that you do with the walking.  I pray everday for the scale to go down. I am busting my butt and not eating it has to do something. God has directed my path so far so I am putting my trust in him. With the help of my hubby I now have an avatar and pictures yea! IF YOU WANT TO DO LOW CARB HERE IS THE FORUM WWW.LOWCARBFRIENDS.COM . Lots of receipes and support click on the main low carb lobby for all kinds of help.

Here is a receipe that is out of this world from my dear friend Kim I thought I had died and gone to heaven.

GREEN "ENCHILADA" CHICKEN CASSEROLE
4 cups cubed cooked chicken or turkey
2 teaspoons Seasoning for Tacos
8 ounces cream cheese
1 tablespoon minced chives, optional
7 ounce can Green Mexican Salsa
4 ounce can chopped green chiles
6 ounces Monterey jack cheese, shredded
4 green onions, chopped

Grease an 11x7" baking pan. Put the chicken in the pan and toss with the taco seasoning to coat. Soften the cream cheese and whisk well with the chives and green sauce in a medium bowl. Stir in the chiles. Pour the sauce evenly over chicken. You can mix it in if you like, but it's not necessary. Top with the cheese. Bake at 350º 25 minutes, until hot and bubbly. Remove from the oven and immediately sprinkle with the green onions.

Makes 6-8 servings
Do not freeze

Per 1/6 recipe: 432 Calories; 29g Fat; 38g Protein; 5g Carbohydrate; 1g Dietary Fiber; 4g Net Carbs
Per 1/8 recipe: 324 Calories; 22g Fat; 28g Protein; 4g Carbohydrate; 1g Dietary Fiber; 3g Net Carbs

My favorite dessert
1/2 block of cream cheese
sprinkle splenda to taste
sprinkle sugar free pudding dry mix just a little over cream cheese
mash up and top with spray whipped topping.
A little taste of heaven.
