Gone Nuts Crepes Experiment

I tried www.theworldaccordingtoeggface.blogspot.com recipe for crepes. As it turns out I am not as good at making pretty crepes like she is, but I did get better at the end of the batch. I have to say that for an ugly crepe they were DELICIOUS! Visit her blog and try her awesome recipes.

  My first crepe!

Gone Nuts Crepes

1/2 cup eggbeaters

1/2 cup Almond Milk

2 Tablespoons Water

2 Tablespoons Sugar Free Torani Syrup

1 Tablespoon Canola Oil

1/2 cup Peanut Flour

1/2 teaspoon Baking Soda

dash of Salt

 

For savory crepes: leave out SF Torani and use 1/4 cup water instead.

 

Blend all ingredients on low till thoroughly combined. Pour into a bowl, cover and refrigerate for a half-hour.

 

Spray non-stick 8-10 inch crepe pan with Pam non-stick spray. Pour 1/4 cup of the batter into the pan and twirl it around to spread the batter in a thin circle.

 

Cook till top appears dry and flip. Cook a minute or so on other side. Repeat till all batter is used. While you are making them you can keep them warm in a low oven 200 degrees or nuke 20 seconds before serving. Makes 6 crepes depending on size of pan.

 

Refrigerate up to 3 days. Nuke 20 seconds to warm or they even taste yummy cold from the fridge.

Most Amazing Snack Ever!

Everyone who knows me know I like to share what I love. I have a very short list of products that I want to have stockpiled if TSHTF (The Shit Hits The Fan for those that don't know). Some of those products are Click Espresso Protein Drink, Pirate Booty Snacks (White Cheddar of course), Bobs Red Mill TVP, Celebrate Vitamins and PB2 Peanut Butter Powder. Now I have a new one to add to the list, a savory, crunchy AMAZING snack that is not just a chip, but an incredible ingredient to many recipes.



Kay's Naturals Crispy Parmesan Protein Chips. Now that's a mouthful for sure and my mouth exploded in cheesy goodness. I order most of my proteins and supplements on-line and I try to add something new to try for each order. I picked up a 5oz. bag of chip goodness at netrition.com for only $3.29 over a month ago and they have sat in the box with my other protein items forgotten.

Today less then a hour after eating lunch I caught myself starting to look for a snack. Now I recognize this and know that it will cause me problems later tonight if I give into it. I looked at the SF chocolate, the left overs in the fridge and started to go through the cabinets when I realized I was not hungry but craving something, I just didn't know what. When spent 30 minutes and then got control of myself and sat down to the computer to work. Out of the corner of my eye I saw my protein box and realized there was something in the bottom of it I have never even opened yet, and I then realized that it was CRUNCH that was trying to kill me today. I wanted something CRUNCHY!

I opened that box and pulled out one chip and...OMG it is the lightest, crunchiest, melt in your mouth chip I ever had! Now I measure everything so I went over to my scale and measured out 1 oz. (1 serving), and it was a lot. I sat down and savored every single one and the craving stopped. When I went to enter it onto my food log I also realized that I just got 10 grams of protein, gluten free and no sugar with that little snack. I think I am in love! My daughter and I have already figured out what other things we can do with them. We are going to crush some and use it as a chicken and fish coating, we are replacing croutons on salads with them and I'm going to sprinkle them on top of my broccoli casserole.

I don't work for the company and I dont know anyone that does, but I really wish I did! I can not wait to try more of their products. You have got to check these babies out!

Goal!!!!

Today I weighed in at 278! Now what is the significance of that you ask? Well for one I was 440 a year ago but the most awesome part is...that is the weight I was when I got pregnant with Rachael 17+ years ago! 17 years of weight gain gone forever! Anyone that has met me since she was born has NEVER seen me this small or healthy! WOOHOO! My goal was to do this by May 8th, my 6 month surgiversary and I did!

Great things this week!

I am just 3 days from my 6 month suriversay! WOOHOO! There have been some great things going on. Sorry I already know this will look like a book. Names have not been changed to protect anybody.

First, the story is too long, so all you need to know is there is a group of people in my past hobby (SCA) that hate me. Its not that they think I'm not a likable person, Its that I am considered charismatic, I like to learn new things, I teach people what I know, I receive a lot of respect from my peers, and a lot of recognition from my superiors. You would think this is all a good thing but there are always those that don't receive respect that only find joy in tearing down those that are what they are not. Three of these people (we will call them the Triumvirate of Evil) when my hubby and I were separated tried to ensure our separation by trying to pay for a divorce one day after our separation and even went as far as to try to make Wulf choose his family or their friendship. Well Wulf and I just had out 21st anniversary so guess how that worked out for them. I have not been to a gathering of this group in three years, and none have seen me since WAY before my WLS.

Soooo I went to a meeting Tuesday to donate some supplies and to see what is going on because my family would like to resume our medieval hobby. It is how Wulf and I met 23+ years ago and we used to enjoy it till we got in this group. Wulf and I have spent many, MANY hours in therapy and worked together to save our marriage and make life better for our kids. We learned how to talk to each other again, and the Triumvirate doesn't even bother me anymore. Wulf says I'm too forgiving, but he's right I will never trust them again. I have discovered, however, that their discomfort around me the few times I have seen them have caused little happy feelings inside, so I guess a little part of me still thinks they suck.

I arrived early to bring my donations and the third member of the Triumvirate of Evil, Maria, was one of only three people there. She turned around and said "Theodora welcome" then went back to talking to someone else, I am totally fine with that. While sitting there and waiting, others started to arrive and one by one, people I knew would walk-in, stop, stare, figure out who I was and run over to welcome and hug me with big shocked eyes. Then the second member of the Triumvirate of Evil, Tammy, entered. She walked in, stopped, stared, then walked over to put her stuff down while her husband ran over and hugged me. Tammy then walked over and said "Teddi you look so good!" So I said thank you and I answered a few questions from the small crowd about how the kids are, are they going to see more of us, etc. Then the head of the Triumvirate of Evil, Nancy (Wulf would probable reverse Tammy and Nancy), entered. She sat down right in front of me at the table so she was facing me. Nancy looked at me, started the meeting, answered a question from someone, then looked at me again. Her eyes then got huge and right in the meeting yelled, "Oh My God Teddi is that you?" The friends around us just started laughing and she asked if this meant that we would be coming back, when I told her yes she then introduced me to the groups members that I don't know and talked about how talented I am and how great it will be to have us active.

Now this where some of my feelings I forgot I was capable of come in. Time has not been as good to the Triumvirate of Evil as it has been to me. Maria is much grayer and doesn't smile, Tammy found out she is diabetic and almost died (she doesn't know we helped her hubby through her coma for three days) and has put on a few pounds, and Nancy...well I might not have recognized her at first if I had not seen pictures a couple months ago. Taking care of her mother until she died has really aged her and she has gained close to one hundred pounds. I am a BIG believer in karma and I think that is why I haven't really thought any bad things about them, its also because I worked on my own issues during our reconciliation, but just for a minute I thought "Damn, look what being bitter does to you". Now I wasn't an idiot, I knew I was going to be seeing these people so I dressed up, had perfect hair, and perfect makeup. I did choose clothes that made me look HOT and a few told me so, including Nancy's husband. I think I am starting to get used to that and I don't think "no I'm not, but thank you" anymore. The reality is that I felt good about myself and the choices my family and I have made, including this surgery and would not change the direction our lives have taken for anything or anyone. But, seeing so many people from my old life just being stagnant, or worse still degrading before my eyes, made me a little sad. I have discovered a life I enjoy and deserve and I wish everyone else would do the same, but I am not responsible for their choices and will not feel guilt for what my family has accomplished. That also means that they will not keep my family out of a hobby we enjoyed a long time before we ever met any of these people.

Yogurt Fruit Pops

I have to say I love The world According to Eggface blog. If you have never been there you are really missing out. http://www.theworldaccordingtoeggface.blogspot.com  I get alot of ideas and make new recipes of my own as well as make alot of hers for my family. She gets the credit for this inspiration.

I got an awesome gift for my birthday, these are the monster pop molds from Bed, Bath & Beyond. I love them, they are so cute. I like the the holder is reversible to hold one way for the freezer and one way for eating. I also like I don't have to soak all of them in water to get one out like some molds are. Don't they look cute in my freezer?

 

 

Yogurt Fruit Pops

 

1 cup Boiling Water

1 Small Box Sugar Free Jello (4 serving size)

6 oz Nonfat Greek Yogurt, Plain

1 oz Sugar Free Syrup

4 oz No Sugar Added Fruit Puree

 

Pour boiling water slowly over jello mix. Stir till dissolved. Set aside. Mix yogurt & syrup together until well combined. Add fruit puree to yogurt mixture, mix well. Add jello to yogurt mixture, mix well.

 

Place in fridge for ½ hour. Remove from fridge and pour into Popsicle molds. Place in freezer for 6 hours until set. Remove according to mold manufacture directions.

 

Make 8 – 2 oz Popsicles.

 

Nutrition: 1 – 2 oz Popsicle

Mandarin Orange (Mandarin orange, orange jello & vanilla SF syrup)

Wulfs Awesome Frittata!

Today in adventures in cooking...frittata. It's Italian for scrambled eggs (not really). A light and fluffy egg dish, can be made with any 1 cup total of vegetables and/or meat.



Wulfs Frittata (Makes 6 servings)

6 large Egg, Whole
1 oz Asiago Cheese
1/2 tsp Pepper
1 dash Salt
1/4 cup chopped Green Peppers
1/4 cup chopped Onions
6 strips Turkey Bacon

Preheat oven to broil.

In med bowl blend eggs, cheese, black pepper and salt. Heat 12" non-stick, oven safe saute pan over med high heat and spray with olive oil pam. Add veggies and bacon to pan and saute 2-3 minutes.

Pour egg mixture into pan and stir with silicon spatula. Cook 4 to 5 minutes or until egg mixture has set on the bottom and begins to set up on top.

Place pan into oven and broil 3-4 minutes until lightly browned and fluffy. Remove from pan and cut into 6 servings. Serve immediately.

Serving: 1/6 of recipe

Cheesy Bacon Wrapped Chicken (Alice Chicken)

Bacon...everything can be made better with an application of bacon. Well except chocolate cake of course. Here is my version of a type of Alice Spring Chicken.



Cheesy Bacon Wrapped Chicken

1 1/2 pounds chicken strips (approx 8-3oz strips)
1 Tablespoon Ranch dressing mix
8 slices turkey bacon
7 oz cheese, sliced (I used Asiago cheese)

Line baking pan with foil and spray with non-stick cooking spray.

Sprinkle ranch dressing on both sides of chicken strips. Wrap bacon, spiral method, around chicken strip and place on prepared baking sheet. Bake at 350 degrees for 20-25 minutes.

Remove from oven and turn temperature to broil. Top each chicken/bacon strip with approx 3/4 oz of cheese. Return to oven for 1 minute until cheese is melted. Serve immediately.

Serving size: 1 strip
