My soft food recipe - Chicken Shepherd's Pie

Was in the mood for cooking this evening and went all out! Dinner was sooo good.

I marinated some ground chicken in a low carb mesquite sauce, garlic,  and spices. Then I cooked in a frying pan and put aside. Chopped onions,  mushrooms,  carrots,  and zucchini sauteed with some more garlic (love it). Made mashed cauliflower  and mixed in some laughing cow garlic and herb. 

Last night i bought some cute little ramekins at Ikea and figured they would make nice smaller portions. I sprayed each ramekin with nonstick spray,  Then layered the meat,  1tbs reduced fat cheddar Jack cheese,  veggies, mashed cauliflower,  and topped with another tbs of cheese. Baked in the oven at 350 until bubbly. 

The servings are still too big,  so i only eat half at a time. But each serving is only 110 calories,  5 carbs, 14 protein,  6 fat. Loving it!
