Parmesean Fish

Serves 4--please note that I "eyeball" measurements, so here are rough ones!

4 portions of a white firm fish (haddock, mahi, cod, halibut, etc....)
mayonaise
greek style seansoning
2-5 cloves of garlic (however much you like)
20 sprigs of italian flat parsley medium chopped
1/2 c panko style italian flavored bread crumbs
2 T olive oil
2 t lemon juice
1- 1 1/2 cup of fresh shredded parmesan cheese

pre-heat oven to 350

spray bottom of baking dish with PAM
place fish in pan and spread mayonaise on top
sprinkle with greek seasoning
place in oven and bake for 10-15 minutes depending on thickness (fish should be firm and turning slightly opaque)

in a bowl combine olive oil, lemon juice, parsley, garlic and parmesan cheese--mix well
toss in bread crumbs but be careful not to break them up too much

remove fish from the oven and place crumb mixture on top of fish--return to oven for another 5 minutes or until golden crusted

Plantation Caserole

2 pounds ground beef, browned
large can of corn
1/2 cup diced onion
8 oz cream cheese
1 cup milk
can of cream of mushroom soup
garlic powder
1 cup mushroom pieces
salt

Combine soup, cream cheese and milk in blender. Pour over browned beef, mushroom and corn and mix together-- heat all the way through on stovetop on low heat-- add garlic powder and salt to taste.

Crock Pot Stuffed Cabbage Casserole

1 lb ground beef 
1/3 cup chopped onion 
4 cups coleslaw mix 
1 medium green pepper, chopped 
1 cup uncooked instant rice 
1 1/2 cups water 
2 beef bouillon cubes 
1 (6 ounce) can tomato paste 
1 (14 1/2 ounce) can diced tomatoes, undrained 
1 tablespoon Worcestershire sauce 
1 teaspoon salt 
1/2 teaspoon pepper 
1/4 teaspoon garlic powder

In a skillet, cook beef and onion over medium heat and drain. Transfer to crock pot and add slaw mix, green pepper and rice. In the microwave, dissolve bouillon cubes in water. In a bowl, combine the water and tomato paste and stir in the remaining ingredients. Pour over beef mixture and mix. Cover and cook on low for 4-5 hours or until rice and vegetables are tender.


Vit C with Iron

Many people know that vitamin C taken with iron will increase the absorption, but did you realize the ideal combination is 200mgs vite C to 30mgs of elemental iron?

So a 325mg ferrous sulfate tablet is 65mg of elemental iron.  Ideally, you would add about 400mgs of vitamin c with that iron dose to get the best absorption.

EGGS BENEDICT 
4 Servings

4 eggs (2.4 grams of carbs)
Canadian Bacon

Sauce

1/2 cup butter
3 beaten egg yolks (0.9 grams of carbs)
1 tbsp water
1 tbsp lemon juice (1.3 grams of carbs)

Lightly grease skillet. Fill skillet half way with water. Bring water to boiling. Reduce heat and simmer. Break eggs into cup and carefully slide one at a time into water. Allow space for each egg. Simmer for 5 minutes. Meanwhile, heat Canadian Bacon in skillet. Remove poached egg and serve with Canadian Bacon and Hollandaise Sauce.

For sauce, combine butter, egg yolks, water and lemon juice. Heat in a double boiler, stirring constantly.

Carb Count: Recipe Total 4.6 grams of carbs, Carbohydrates Per Serving 1.15 grams of carbs

Crock Pot Chicken Parm

The recipe is very good and quick to make. 

Chicken Parm.

1 pound bonless/skinless chicken breasts
1 tbl olive oil
8 oz mushrooms, sliced
1 onion, chopped
1-26 oz jar spaghetti sauce
1 tsp oregano leaves
1 tsp basil leaves
1 bay leaf
1/2 cup mozz cheese, shredded
1/4 cup parm, grated

Put the onions and mushrooms in the bottom of the crockpot.  Put the olive oil in a skillet and lightly brown the chicken breasts.  Then put the chicken on top of the onions and mushrooms.  Pour the spaghetti sauce over the chicken.  Add the seasonings on top of the sauce. Cook on low for 7-8 hrs or high for 3-4 hrs (mine took about 2.25 hrs to cook on high).  Sprinkle the 2 cheeses on top of the chicken and let it melt for 15-30 min w/out the lid.

Peanut Butter Protein Brownies

Peanut butter protein Brownies

16 oz of peanut butter by weight
1/3 cup almond meal
1/3 cup wheat germ
1/3 cup oatmeal
3 eggs
1 tablespoon vanilla
16 tablespoons of splenda for baking
4 scoops of vanilla protein powder

Mix all together  and press into a small cake pan (the mixture is very dry) .  Bake at 350 for 20 mins or until done.
As soon as the bars come out of the oven top with 2 ozs of unsweetened baking chocolate or similar ( i used 70 grams of 85% cocoa chocolate) As the chocolate melts brush onto the top of the brownies.

Cool and enjoy.

Protein Cheesecake

Ingredients:
~ 1/2 cup light cream cheese
~ 1/2 cup light ricotta cheese
~ 1 package of sugar free instant cheesecake pudding (unprepared)
~ 1 cup skim milk
~ 1 scoop of unflavoured protein powder

Directions:
~ Put all ingredients in a medium sized mixing bowl.
~ Mix with hand mixer on low-medium speed.
~ Dish into individual serving bowls/cups.
~ Chill & serve.

Nutrional Values:
~ 6 servings = 1/4 cup each
~ Calories = 112
~ Fat Grams = 4.8
~ Fibre Grams = 0
~ Sugar Grams = 4.2
~ Protein Grams = 8.1
