continued from introduction

Dec 22, 2014

I had no gall bladder or appendix to make the diagnosis easier. The surgeon called in knew of the DS and saw that the blockage was a twist in the common channel. He removed it & restapled it he said and I have had no further episodes. Apparently lots of adhesions had formed & twisted the common channel somehow. I did struggle with taking all the vites off & on and have had some labs go a little low. I also have been diagnosed with osteopenia this year, tho I had a normal bone scan 2 years ago. I was partially at fault not taking enough. I now have increased it considerably and also take K1, k2, Vit D, Magnesium, & the rest religiously to turn it around. I followed the Vitalady list, tho have changed some of them, such as CAL UP D powder from Amazon instead of the big chalky horse pills! I am post menopausal so don't need iron infusions- the ferrous sulfate 325 mg my PCP recommended was enough to keep my iron in range. I don't use shakes at all but enjoy eating steaks, burgers, cheese, nuts, greek yogurt, or other proteins. I do have a sweet tooth & unfortunately haven't refrained from sugar, except during the first 9 months when it didn't taste well. I lost the weight during those months tho fortunately. I am presently 180 pounds and OK there. I am 63 so am not considering the reconstructive surgery due to age & expense. I am happy to have so much more energy and better health and look better, tho I did look older. I have struggled with depression since the DS more than before but I also started menopause the year prior so I know that played a part. I don't know if it was the DS or the hormonal changes from menopause but I lost all sexual desires & I believe that contributes to the depression also. I do not regret the DS however. I would do it again. I don't feel I have to diet anymore and I weigh what I did in 8th grade. I am pleased with my size, tho I feel I could easily drop 20-30 more with effort in going lower carb. I will eventually an a before & after picture here when I figure out how to scan.

chocolate bacon bark

Chocolate Bacon Bark!

Ingredients:

  • 12 ounces good-quality semi-sweet chocolate chips
  • 7 large strips of bacon, fried until crispy

Preparation:

1. Prepare a baking sheet by lining it with aluminum foil and set aside for now.

2. Place the chocolate in a microwave-safe bowl and microwave in one-minute increments until melted, stirring after every minute to prevent overheating.

3. While the chocolate is melting, chop the bacon strips into small bits. Set aside approximately one-third of the bacon to be used to top the bark.

4. Once the chocolate is melted and smooth, stir in the remaining two-thirds of the chopped bacon, and stir until the bacon bits are well-incorporated.

5. Pour the chocolate onto the prepared baking sheet, and with an offset spatula or a knife, spread it into a thin layer about 1/4” high. While the chocolate is still wet, sprinkle the top evenly with the reserved chopped bacon and press down gently to adhere it to the surface.

6. Refrigerate the bacon bark to set the chocolate, about 30 minutes. Once set, break it into small uneven pieces by hand, and serve immediately. Chocolate Bacon Bark can be stored in an airtight container in the refrigerator for up to a week.
