This recipe is for post WLS people who are transitioning to regular food.  Delish!

Slice 2 potatoes & 3 carrots quite thin -place in bottom of casserole - make small about 1" round meatballs from ground beef-the less fat content the better.  Place on top of veggies.  Slice an onion, also put in casserole.  Sprinkle with garlic powder and cover with tomato soup, low or fat free.  Last ingredient is about 4 bay leaves on the top.  Cover casserole and put in 350 oven until potatoes and carrots are very soft, about an hour.  I love this!  Potatoes make the tomato soup kind of thick.  I was able to freeze some for later meals.  I could tolerate this about 2 weeks post surgery.

This sounds good!!! I'm looking for recipes.. U was eating this at 2week kudos to u.. Thanks for the great idea!!! How's ur progress.. Mind is slow but I'm not complaining.. I do feel better.. Healthier me!!
