Regarding the coconut milk, what brand did you use? I really love the "So Delicious" brand unsweetened. It comes in a carton, refrigerated, in the dairy aisle. It has a totally different taste and mouthfeel from canned coconut milk (which I get in the Asian food aisle and pretty much use for Thai cooking only).
It doesn't taste fatty to me (despite the fact that it is basically pure fat!). But then, my tastes have changed quite a bit since surgery, so that could be it too. I think sometimes our tastes and bodies adapt based on what we need.

Groceries are an area where I admittedly like to splurge. If I didn't shop at BJ's and look for sales like a hawk, I'd probably go broke on my cheese and bacon habit alone.
Currently, I spend an average of $175 per week. That is for myself, my husband and my disabled mom who lives with us. Part of the cost is the fact that I have special foods which they don't eat (and vice versa), so there's duplication happening.

Jenna Lynn, thanks for posting this and it was very informative. I have a question, and please don't take this as snarky, or negative or attacking or anything. I am genuinely curious....
I know how my excretory system would react to that amount of food/fat in a days time. I would spend several hours in the bathroom, and not in a GOOD way.
I'm wondering if your body has adjusted to this eating style, or if that 80% that passes through causes you to spend more time in the bathroom than you would like? I'm trying to figure out the pooping/gas issues here....
