Chicken Stew recipe...

Chicken Stew

3 1/2 cups tomato juice
1 pound chicken breasts (other chicken pieces work) 
2 small potatoes, diced
1 medium eggplant, cut up, I don't peel it
1 large onion, diced
6 stalks celery with greens, diced
1 pound green beans (could be frozen (thawed) or fresh clean)
12 ounces fresh mushrooms
1 tablespoon oregano
Fresh chopped garlic (3 to 4 cloves)
2 medium dliced onions
salt and pepper  
Parmesan cheese, grated

Place all ingredients in a crockpot in the order listed (except for the
cheese), cover and cook 8-10 hours on low. Serve with cheese.

Note :  I usually cook it overnight and then turn it off in the morning, let it stand all day, so the flavors "mature" and it will be great for dinner!  Serve it with Dreamfields noodles, or by itself or however you prefer.  Enjoy!!!

Do you have any tofu recipies? My husband bought me tofu, but i have no clue what to do with it other than use it as a doorstop.

 Tofu takes on the flavor that you soak it in.  If it is soft tofu, you can blend it with a smoothie or protein shake...in the blender.  With firm tofu, you can cube it and marinate it in any seasoning....even just soy sauce and garlic and saute it.  I like it marinated in peanut sauce with a little red chili pepper.

i just don't want to marinade it in anything that is counter-productive to my pre-surgery diet. it's firm, maybe i'll try your recipie and hope for the best.
