I have always been on the "large" side and then gained 50 lbs with my first, and only pregnancy.  I have been trying forever to shed the baby weight and the additional 30 lbs that I have since gained and lost at least 30 times!  Well, with my baby turning 20 this year ( Yes...2 with a zero behind it) I've decided that I want to live to see grandchildren some day, that I want to feel less than my age again and that I want to get off the the 3 blood pressure medications that I am taking.  It is time to take back  control of my health and of my life and so this is where my journey begins......................

Chilie Relleno/Turkey casserole

The basic recipe is:

8 oz Jack cheese cut in 12 strips
1 large can whole peeled chilies
8 eggs
2/3 c. milk
1 c. flour
1 tsp. baking powder
1 c. cheddar cheese

Put cheese strips in chilies and arrange in a greased 9 x 11 pan
Beat eggs, milk, flor and baking powder till smooth.  Four mixture over chilies and sprinkle with cheddar.  Bake at 350 degrees for 30-40 min, until knife inserted in center comes out clean.

My adaptation for the evening was to brown 1 lb turkey meat cooked with taco seasoning - I split the chilies open and laid them out flat in th bottom of the dish, topped each one with a slice of jack, spread a layer ( 1/2 lb.) of the taco meat, layered 1/2 of the egg batter, another layer of split open chilies, cheese, taco meat and topped it off with the reamaining egg batter.  It cooked in the same amount of time.  I only used the jack, it was plenty of cheese...didn't sprinkle the extra cheddar.  

To serve I add a dollop of greek yogurt ( or sour cream) and a spoonful amount of salsa on top.

This dish is great for leftovers too!
