Sweet and Sour Meatballs on November 9, 2008 10:55 am
Sweet and Sour Sauce:
1 bottle Heinz chili sauce
1 bottle of water (use chili sauce bottle)
1/2-3/4 cup brown sugar (brown sugar splenda works great to save carbs)
1 can whole berry cranberry sauce or 2 cups grape jelly, whichever you prefer, both work great. (can use sugar free jelly also btw, it works well)
1/4 c. red wine (optional)
Mix together ingredients for sweet & sour sauce in a sauce pan and simmer until well blended and add to slow cooker and cook until hot.

Exerthon 4.0 and 5.0 on November 3, 2008 2:55 pm
So I joined the Exerthon on the WLS in your 20's board. Basically you track your exercise minutes Monday to Sunday for 8-9 weeks at a time. You set your own goal and a member of the board tracks everyones totals. So motivating. Im currently working toward a Wii. I need 3000 minutes total
Here are my current totals:
Week #3 ===9/22-9/28=== 135 min.
Week #4 ===9/29-10/5=== 335 min.
Week #5 ===10/6-10/12=== 225 min.
Week #6 ===10/13-19=== 165 min.
Week #7 ===10/20-26=== 210 min.
Week # 8 ===10/27-11/2=== 290 min.
Exerthon 4.0 total 1360 min. GOAL: 3000 min. Remaining: 1640 min.

Magic Pizza Crust
8 oz. grated parmesan cheese (fat free)
1/4 t. baking powder
2 T. shredded mozzarella (fat free)
2 T. extra virgin olive oil
3 large eggs
Combine all ingredients in a bowl and mix well. Spead evenly in 12 inch pizza pan and bake at 450 degrees for 12 minutes. Take out and top as you like. Bake at 350 until cheese is melted and bubbly.
The entire recipe (without toppings) is 8 carbs. That's 1 carb per pizza slice. Then, add the carbs of whatever toppings and pizza sauce.
You can experiment with this and make bread for sandwiches and burgers!
Another Type of Pizza – Meatball Pizza! (150 Calories, Almost 15 grams of protein!!!)
-1/2 of a Thomas' WHOLE WHEAT english muffin, toasted very well
-1 tblspoon of any low-sugar spagetti or pizza sauce
-1 to 2 small frozen turkey meatballs
-approx 1 tblspoon of fat free or part-skim mozzarella cheese
-Toast the english muffin REALLY well, then layer the sauce on top. Place the frozen meatballs in the microwave for 1 minute, then slice thinly and layer on top of the sauce. (I used about 1.5 meatballs) Then top with cheese and melt in the oven or toaster oven.
Ruby Tuesday's White Chicken Chili
1 T. extra virgin oil
1 chopped chili pepper
1 medium onion, chopped
1 garlic clove, minced
3 c. chicken stock
2 cans great northern beans
1/2 c. salsa
1 t. oregano
1 t. cumin
1 t. cayenne pepper
salt to taste
3 c. diced cooked chicken
Garnish: Cheddar Cheese or Mozarella and Sour Cream (fat free)
Saute onion, garlic, and pepper in oil. Add stock, seasonings, beans, salsa, and chicken. Bring to a boil. Cover and simmer for 20-30 minutes. Put in bowl and garnish as desired.
Skillet Lasagna
1 lb lean ground beef
1 small onion, chopped
2 minced garlic cloves
1 can diced tomatoes
8 oz tomato sauce
1 can water
1 t. oregano
1 t. basil
1 t. kosher salt
1 T. parsley
2 1/2 c. whole wheat pasta (raw)
1 c. fat free cottage cheese
1/4 c. fat free shredded mozarella
1/4 c. fat free grated parmesan
Brown meat, garlic, and onions. Add tomatoes, sauce, seasonings, water, and whole wheat pasta. Bring to a boil. Cover and turn heat to low. Simmer for 20 minutes or until pasta is done. Combine cheeses and drop by spoonfulls on top. Cover until melted.
Crockpot Jambalaya
1 can diced tomatoes
1 can beef broth
1 can tomato paste
2 med. green peppers, chopped
1 med. onion, chopped
3 celery ribs, chopped
1 carrot, chopped
3 garlic cloves, minced
3 t. parsley
2 t. basil
1 1/2 t. oregano
1/2 t. cayenne pepper
1/2 t. hot pepper sauce (Franks)
Kosher salt to taste
1 lb chicken breast, cubed
1 lb smoked sausage, sliced
1/2 lb uncooked shrimp
Hot cooked brown rice (optional )
In slow cooker combine all ingredients except shrimp and cook on low for 4 hours. Stir in shrimp. Cover and cook 15-30 minutes until pink. Freezes well. Serve with brown rice for Core or eat without rice.
Great Chicken Meal
Extra Virgin Olive Oil ½ Ground Pepper
Hot Peppers (Optional)
Basil
Oregano
2 Tbsp Chopped Onion
2 Garlic Pieces, Minced
3 Chicken Tenders
3 Mushrooms, Sliced
1/2 Green pepper, Chopped
1 small tomato in wedges
Saute Garlic and onions together in a skillet. Little Oil. Saute til it carmilizes. As it simmers, add basil and oregano. After it browns a little, add the green peppers. Let simmer til brown. Then add chicken. Once seasoned and cooked thoroughly, add mushrooms. Cut up tomatoes on the side is a delicious add….
Kosher Salt to taste
Total Calories: est. 250 ….a little on the high side for calories, but remember, only 2 oz. of food per sitting.

and WARMING!
Egg White Spinach Omelette
Egg-whites
Frozen Spinach
Spices to your liking (I used .5 tsp cumin [which turned egg-whites yellow and that's good if you're trying to trick people into eating healthy lol]
1 clove crushed garlic
pepper to taste
.5 tsp cayenne pepper
veggie-slice (soy-based cheese)
condiments to your liking (I topped it off with sarachi chili paste - spicy! :oP~).
Directions: Place about half cup of frozen spinach in microwave-safe bowl and nuke for 34-50 seconds depending on your microwave setting. Add spices and egg whites and mix in bowl. Have frying pan heated on medium-high and cook omelette mixture. Flip over after about 4 minutes or after egg is a golden yellow. Repeat on other side, add a slice of cheese to 1/2 of the omelette circle, turn off heat and put lid on omelette. Wait one minute, fold the omelette in half, squeeze a condiment on top (optional) and serve with greens or just alone and voila.. another pretty and nutritious morning breakfast for us egg-eating folks!! :o)
Calories run about 100-200 calories depending how much egg you use~ Nice huh?

4 and some month update- Happy Sunday on October 26, 2008 1:22 pm
I've been feeling really good about my weightloss journey and all the things that I am now able to do. Still stressing about work but Im just talking weight now. Finished the local Breast Cancer 4 mile walk in an hour and a half. Stopped just once for a pic. No face sweat! Legs felt wobbly, had to remember to keep breathing, lungs were working hard, but I did it! What a change from previous 5k or 3mile walks. Of course, I was plotting how to get out of doing the entire 4 miles the entire time.... but I did my thing out there. Still looking for a personal trainer. Chopped almost all of my hair off last week. I just got tired of the spikes (was starting to resemble the class guinea pig). I must post update pics in my blog. Weightloss is mostly still in the top portion of my body. Oh,well since this is turning into an update, my four months was the 16th of this month and I have officially weighed in at 379 as of yesterday. Ill take it! I was stalling for awhile and finally got back on track and am in the process of exercising to earn my Wii.  I just love it and its now being kept at my boyfriend's house until I complete 3,000 minutes of exercise. Im currently at 845minutes! My ideal schedule is MWF 6:30-8PM water aerobics, T, Th 5:30-6:15 treadmill/ recumbent bike- 350/ week. It hasnt happended again since the first week. Life. But Im still doing something every week. My next goal is to be doing something everyday. The 20th was a n off week. Came back from Homecoming and volunteered at the Susan Komen walk to direct traffic. In the cold for 3 and 1/2 hours. Got sick and then tripped on Thursday at school. Big toe hurt. Got checked out, strained the joint. Felt fine this morning though. Almost took another spill as we were wrapping up the walk. Legs stopped wanting to lift. Lol. So even though I have sooo much school work to do, I say to all Happy Sunday!

My Story So this is me. 26 year old female from New York seriously working on getting WLS this summer or fall. I've been overweight all of my life, except ironically enough as a premie. My mother lovessss to show my small a@$ diaper. Anyway, those days are long gone. I can even remember being the tallest person in kindergarten. I'm 5'11 now and wayyy past the 400 lb mark. I know! S@#t is surreal. Anyway, I'm currently in a size 30/32 and size 11 shoes. I was recently diagnosed with High Blood Pressure. Talk about panic attacks. Ohhh no. Just when I'm finally committed to doing the right thing by my health. The pits. Anyway, I am going to have my surgery done at the Barix Center in Langhorne, PA. Its a drive from MD, but I totally am comfortable there. I want to get surgery for most of the same reasons that people have previously stated. I can't wait (But I will) for the days of not having to be ultra-conscious of my environment. Meaning, is it fat-people friendly, can I fit, will I break something? Ugh. I've been mostly celibate for two years (Somethings just don't count) and I want to enjoy this total focus on me as I go through my journey. I want to be changing like the song from Dreamgirls.... I am changing.... I'll be better than I am. Not to say I'm not banging, but I believe in positive growth. Ok, that's me and my story. Look for updates and posts from me!
