I made an awsome no sugar added banana bread the other day however I only had white flour and was wondering if anyone has a suggestion for a substitute for the next time-Ive heard of almond flour and was wondering if anyone has used it in baking or do you have another idea? Thanks for your help-Lori

Lori - I've used almond flour for coating foods like fish to saute, but haven't baked w/ it. I think according to recipes I've seen, that you mix it 1/2 flour and 1/2 almond flour. I know I've seen peanut butter cookies made w/ it, just haven't tried it yet. Karla

I dont really cook/bake... but I still look at many WLS friendly recipes... most call for almond flour or the 1/2 and 1/2 combo that was posted above. I see almond flour at trader joes and i know that susan maria sells it at bariatriceating.com I *think* it is higher in fat though... that is the comprimise of using it over white.
